    Сам процесс приготовления пиццы,посмотрю,я ведь столько не буду делать,придётся уменьшать.И соль сразу с дрожжами не вводят,а примерно через 15 минут.Подъема не будет если сразу соль положить.Спасибо интересно🌿🥗🌿.

      По правилам Ассоциации Настоящей Неаполитанской Пиццы так, соль растворяется только в воде. Нужно больше 5 минут в рассоле, чтобы погубить дрожжи. Также надо муку 10% от массы добавить к соли. Но он долго не ждал, так что все ОК. Не волнуйтесь. Это оптимальная последовательность, особенно для дома. У меня замес 270 грамм для 2 пиццы с 80% гидратации. Это для дома достаточно и с таким объемом точно не будет окисления теста.

      You don't need sugar as flour is broken down to polysaccharides or sugar when hydrated

      Sugar is beetroot and yeast is beetroot, why too much beetroot (unless you use grapes yeast, but it is very strong, no need sugar either)! Flour is already starch and it is carbohydrates. The glycemic index is higher with the flour. Do not worry! Enough sugar. With the pizza more important to have higher protein to ferment it into aminoacids for non-enzymatic browning. Honey, beer is OK for extra taste since it is already a fermented product, but then it is not a Neapolitan pizza.

    Looks like amazing pizza dough ! Maximum respect to this master pizza chef. No doubt this dough is much better than my no-knead pizza dough but far too much work ! My pizza dough requires mixing 5-6 ingredients in bowl - 90 min later I have excellent pizza dough that I can use right away or freeze. ✌️🇨🇦👍

      Только так по Правилам AVPN, по другому делают в пиццериях где большие замесы, но тогда нет одобрения Ассоциации. Дома маленький замес, а соль растворяется только в воде, не успеют дрожжи разрушиться, как замес с мукой начнется.

      I am the person who made the video and from what I understand, even though I am not a pizza chef, Neapolitan pizza chefs use direct dough and therefore not a marble to make traditional Neapolitan pizza.

    Специалисты...Им неведомо поди железное правило в кулинарии... Соль убивает дрожжи. Поэтому соль добавляют только после того как дрожжи заработают в полную силу. По этой же причине и масло вводят в тесто ( или опару) только при полной активации дрожжей, т.к. оно гасит активность дрожжей. Т.е. эти ингредиенты вводятся только при полной активации дрожжей, уже перед вводом полного количества муки в готовую опару или тесто. Исключением является только увеличение количества дрожжей, для достижения желательного подъёма, но это идёт к ухудшению вкусовых качеств.

      question très intéressante, je suis désolé mais je suis juste la personne qui a tourné la vidéo et je ne me souviens pas bien de ce que le pizzaiolo Daniele en a dit, je pense qu'il a l'habitude de ne pas mettre d'huile dans la pâte et en fait ça. une fois, il ne l'a pas admis. Donc même pour la pizza à préparer à la maison, il ne la met pas mais je crois me souvenir qu'on peut aussi la mettre, je pense qu'à un certain moment de la vidéo, il le dit.

    Ive watched 10s of thousands of pizza dough videos, mostly neopolitan. None of the recipes are the same and vary greatly.
    So after 3-4 years, my suggestion is really just to jump on a recipe. Try something out and then feel along how you prefer.
    After a while you dont have to measure but have a good feeling of proportions.
    If you chase the perfect dough recipe, youll never cook.

      네 물론이죠 피자가게에서 일하는 피자 셰프인데 집에서 피자를 만드는 것과 똑같아서 피자가게의 오븐을 사용해도 똑같은 온도에 놓아도 똑같을 수 있거든요 집에서도 딱 이렇게 중요한게 오븐 온도를 최대로 예열해야 한다고 하더군요 그러니까 220도도 미리 예열만 하면 괜찮습니다 안녕하세요 영상 시청해주셔서 감사합니다

    Quando vai per pizzerie devi dire tutto questo velocemente………La pizza pazza che è nella pozza fa un puzzo su un pezzo di pezza e quel pazzo che abita in quel pezzo di pozzo fa pure una puzza. Le pazze e i pazzi spezzano i pezzi di pizza e i pizzi con tutte le pezze e con quelle puzze e quei puzzi ,le posizionano nei pozzi e pure nelle pozze…….W le pizze😂Dici che ti cacciano?😜🍕🍕🫶

    Perché non lasci la polvere durante la notte quando la mescoli con l'acqua? Questa polvere può essere utilizzata per diversi giorni. ? Voglio che la mia pizza abbia un ricco sapore di lievito, cosa devo fare?

      sì è vero è un po' strano a vederlo io che ho realizzato questo video mi sembra poi che tutto sommato cambi ben poco ho parlato anche con tanti pizzaioli e molti sembrano d'accordo con questa cosa che rallenta un pochino ma non significativamente
