Hey, Melanie! I smile whenever I realize that it's you! We made grilled cheese together some time ago. One of the things my mother used to do was soak the cut eggplant for 10--15 minutes in salt water, 2 Tbsp to 3 quarts of water. This gets rid of the bitterness that some eggplants have. Rinse and dry the eggplant thoroughly then continue with your fabulousness.

Thanks, Just made it and 375 degrees at 20 minutes was perfect! I think next time I will peel the skin first as it was a little hard/chewy. Still liked it very much!

Yum! I have an eggplant and didn't know what to do with it. I bet you could make yummy fries with that too. Boil chopped potato French fries till they float and basically season them with same thing as eggplant. Great for fish N chips if you're really hungry. I can't eat that much in one sitting anymore. I regret it if I try.

Hello Melanie . the amount of olive oil that was used is large. the question is if 1 tbsp of olive oil will give the same result .
Lol that’s my habit to eyeball the ingredients and pour the oil straight from the bottle 😂 I think it will be just as good with 1 tbsp of olive oil. There are several commenters who tried the recipe and it turned out great 😋 Let me know how it turns out and how much oil you use.

I did exactly the way you did but my Eggplant became really bitter. What could be the reason?
It happened to me once too! It's the type of eggplant, some are just no good! I made this recipe probably 20 times by now, the exact same way every time, and 1 time the eggplant was bitter!

Using oil defeats the purpose of using an air fryer.
I like to add oil for flavor, you can use as little oil as you like (or no oil at all) 🙂
No it doesn't. Having something slightly coated in olive oil for flavor, it's significantly different than it being deep fried in vegetable oil, absorbing oil the entire time.
Oil isnt bad for you especially if its olive oil
