The tofu recipe seems to have come from someone who knows very little about cooking tofu. With tofu, it's all about how it is seasoned and or sauced. It should have been put back in the flour after the egg to get a crispier crust. Also potato starch would have been better than flour. With the recipe you found, you might as well have just eaten straight out of the package. It's no wonder that you didn't like it. It was an enjoyable video over all though.

With the Tofu, I always set something heavy on it to squeeze more of the liquid out for about a half hour or so. Then do basically the same breading you did for the eggplant and dip it in pizza sauce. Also you may want to cut it like french fries in smaller pieces ;)

@@empoweredcooks You definitely have to remove more of the water in the tofu. Tofu also absorbs flavours so you can marinate it in teryaki, or other thin sauces you make yourself. ie; soya sauce, tahini, garlic, onion powder, maple syrup. Air fry until crispy. Yum!!

When it comes to tofu I use paper towels (2 on top, 2 underneath) and gently squish the water out. It takes several paper towels to get a lot of the moisture out. (I know there are better ways). Dipping it in smoked sesame oil and breading them in corn starch before air frying might be good. Fabulessly Frugal I hope you don’t give up on tofu. 😁

I cut my tofu up pretty small-about 1/2 inch cubes and pour chicken broth or miso and sometimes orange juice mixed with soy sauce and bake until the cubes are no longer really soft and slimy. This gives the tofu a better texture in my opinion-I do not like things too soft or slimy. The tofu turns out kind of crispy on the outside and the inside is firm and it takes on the flavor of the liquid that I use. I stir fry these small pieces with veggies so you might be able to use them in the chicken and frozen veggies recipe and I also use them in soup. You might want to try again and see if you like it cut up smaller. :)

I was worried when the tofu wasn't drained. You definitely have to drain the tofu, as in on papertowels with something heavy on top to squish out the water and switch paper towels out when they are soaked!!! Worth a do over draining it first!!! Texture is everything, especially with tofu. We make tofu enough I bought a tofu presser to cut down on paper towel waste and effort on my parr. I love your videos!!!

I'm growing eggplant this year SO am happy you did this. I must try these recipes. The tofu segment was too funny! You did better than my first try at tofu. You must drain the tofu and it really helps improve the texture if you place in the freezer overnight. Just place it in a Ziplock plastic bag. Next day allow to thaw and remove excess moisture by wrapping it in a tea towel or several paper towels. Then you need a marinade sauce for the tofu to absorb flavors. 1 T Tamari sauce, 2 T unseasoned rice wine vinegar, 1 T toasted sesame oil, 1 T Garlic powder, 1 T onion powder, 2 T sesame seeds, 2 T maple syrup, 1 T lemon juice. Cut the tofu into smaller cubes so they absorb more marinade. Save excess marinade for dipping and no coating needed (unless you prefer). Continue to be brave and try new vegetables!! Love your channel and your book.

You need to drain the tofu then blot with paper towels. Cut in through the middle then into cubes. So, then you’d have 24 pieces. The tofu itself doesn’t have much flavor. If you had added some sauce, like teriyaki, it takes on that flavor.
I did like your chicken and veggies and eggplant recipe. So I’ll try them.

I add spices, soy sauce and sprinkle with a little corn starch. 400 for 10 min. Sorry you didn’t like it on your video, but the whole thing with the egg wash is 😫. I'm new to tofu also but I find pressing the block in towels or paper towels with a heavy object first for like 15 to 30 minutes is best. You want it super dry so it's not mushy when cooked. Also smaller bites. Marinade helps also. If done right tofu takes on the texture of meat and the neutral taste takes on the seasoning. I hate mushy tofu the texture is the problem

I love your recipes and the way you do you, like my kids say. Tomorrow will be 2 weeks since I started doing keto (with portion control) and mostly intermittent fasting, when I don't forget to breakfast late. Here's how I figured out how to do baked squash/zucchini:
Slice a squash kind of thick, maybe 3/8". Spread on baking sheet lined with parchment paper. Lightly drizzle with olive or avocado oil. Sprinkle with salt and Italian herbs and put a pinch of Parmesan cheese on each piece.
In my little air fryer, I bake it at 360° for 15 to 20 minutes, until the cheese melts and browns. In a regular oven, probably bake at 400° for 25 to 30 minutes.
Here's another yummy keto breakfast: Inside Out Omelet. It's for 1 serving but you can likely do 3 servings in a regular sized pan. If you don't have a well seasoned cast iron skillet, nonstick ceramic would work.
    Swirl of oil
    Grated cheese of choice
    Beaten egg
Toppings as desired, like green onions or chives
    Seasoning of choice
    Sprinkle of salt
Heat a small skillet on medium-low heat. When hot, add oil and swirl to coat. Put in a good handful of cheese and cook untouched until cheese is melted with edges start to brown. Sprinkle with toppings and pour egg over it all. Sprinkle on seasonings and salt. Cover and cook until egg is set, a couple of minutes or so. Fold in half and serve.
You've given me such nice recipes, I wanted to return the favor. ❤

Tofu is basically tasteless. Hard tofu needs to be pressed to remove excess moisture & then marinated for at least 1 hour before being blasted on a grill or in an oven or air fryer (or deep fried). Look up how to press tofu (basically wrapping it in towels & then putting a chopping board with something weighted on top to gently squeeze the water out) then look up tofu marinades. Soft aka silky tofu is good for desserts.

Had a Chinese friend who told me tofu is a canvas and can become whatever you want it to be; when made by those experienced with it, it is delicious. I would encourage you to order your favorite dish (flavors) from a Chinese restaurant, only with tofu. Give it a try/second chance!
Also, lightly salt eggplant to get the bitter taste out (seeds contain nicotine that gives a bitter taste). It "sweats" out and you need to dab the water with a paper towel to "remove the bitters" (according to my Italian MIL). Male eggplants have less seeds and are therefore less bitter. The end of the eggplant will tell you if male or female. A female has like a dash on the end, a male has more of a circle.
You are my expert for this new cooking adventure, Air Fryer edition, but I just wanted to share a tweak for this oft-avoided eggplant meal that is so yummy once you play with it a little.

I’m vegan and I eat a lot of tofu! I didn’t like it at first! Now I eat it like 3 times a week as my protein. It really is a matter of finding the right recipe. I buy super firm tofu because it doesn’t have to be pressed and the protein is higher. Another thing I do is poke holes in it while it’s marinating in the fridge. It’s like a sponge and it will soke up a lot of marinade. I’m 46 also, I say give it another try lol!

I LOOOOVE eggplant!! It's a wonderful substitute for meat if you're a Veghead!!
I love making my own spice mixes and putting it in a shaker bottle, so I shake it on everything I cook.
Sometimes I use the store bought dry seasoning packets for Ranch and Italian dressing.
I use the Ranch for stews and casseroles. I use the Italian for roasted veggies. Although you can do either or......or mix them up!! I just put some oil or melted butter in a large ziplock baggie, throw in my veggies and/or meat and shake it up! Then when everything is coated, I put in the spices, zip it up again and shake shake shake!!! Then I dump it in a small baking dish and stick in my AF!! This also works for AF ovens!!!
You can add bread crumbs if you want a little crunch to it!!
This also works on tofu! Tofu is like a sponge........if you drain it for about an hour, or press it in a towel to squeeze out most of the water from it, you can marinate it in just about any kind of sauce or marinade you want overnight. Or just use a dry rub on it.
Tofu is tricky too......but when done right, it is really good.

Agree with the comments about tofu. It's fantastic if done correctly. Also, there are different consistencies of tofu that will produce vastly different results. It's no wonder that you did't like this recipe. That's not how to make tofu. Kudos to you for trying it for the first time, but you really need to research into how it's really used. Love the channel, btw!

I've never had tofu, though I have some in the frig. It's supposed to be plain, so the sauce/spice makes all the difference. You had neutral stuff on it and then dipped it in soy sauce, which I don't like. Not surprised you didn't like it.

Mexican style Tofu: Crumble the tofu, onion, tomato, jalapeño, a little turmeric, salt and pepper, stir it all together and it tastes delicious. ✌🏼 I hope and one day you will make the recipe. I would not like tofu that way, either! Was it firm tofu? An addtion to Ilmira's comment I think it needed to be spritzed wth oil and smaller cubes. I also rinse it and put a plate on it and some weight on it for an hour to press out more liquid. I think if the outside could be candied and air fried that would be good. I wish I knew how -I had some once that way. It will take any flavor, so parmesan as a crust would be good. It could used like chicken in some of your recipes with all the flavorings.
I like it but it is not good with thyroid problems.

I'm happy I watched this. I have an egg plant in the fridge just for EPP. But I was going to do it sliced.
Also I don't know if it makes a difference but after they sit longer with salt on them you are supposed to take a paper towel and squeeze some of the water out of them, that's the point of letting them sit with salt on them.

What a fun video! Thanks for bringing us along for this recipe adventure. I think that I will try the first three. I agree that the tofu attempt looked not very appetizing. I think tofu is more of a texture change-up thing. It doesn't generally have much flavour on its own, so I think it needs to be accompanied by really flavourful sauces and ingredients to be more palatable. Dunno, just my own thoughts. Anyhow, thanks so much for another fun, inspirational video.
