    Chuck Carroll is host of the Physicians Committee’s popular “The Exam Room” podcast and known widely as The Weight Loss Champion, a name given to him by an NFL player for losing an incredible 280 pounds. At just 5 feet 6 inches tall, Chuck weighed 420 pounds and had a 66-inch waist before radically changing his life.
    Before that, like so many others, he tried and failed countless times to lose weight. Any success he achieved was short-lived as the weight came pouring back on and then some. At his heaviest, he was eating 10,000 calories every day.
    Out of desperation, he decided to have weight loss surgery in 2009. Prior to the procedure he was convinced that it would become like all the other failed attempts to lose weight. Chuck was just 27 years old at the time and didn’t believe he would live to see 30. He thought at least he would go to his grave saying he tried everything.
    Although a critical component, the procedure proved only to be the first step in his journey. In fact, he only attributes 10 percent of his long-term weight loss success to it. The rest he credits to a plant-based diet and changing his lifestyle!
    By adopting a plant-based diet, he is no longer afraid of regaining the weight as he had so many times before - no more yo-yo dieting! He is thrilled that he is lowering his risk of cancer, heart disease and Alzheimer’s disease, all of which run rampant in his family. As a bonus, he is no longer spending massive amounts of money on medical expenses because of his drastically improved health!
    The confidence he gained from the weight loss enabled him to pursue his dream of becoming a reporter where he covered sports and news for CBS and later NBC News Radio. He was also previously featured in PCRM’s Teaming Up 4 Health campaign where he had the opportunity to speak on Capitol Hill and share his remarkable journey.
    Now he is delighted to be bringing his passion and talents to the Physicians Committee as host of The Exam Room and to show others that the impossible is possible - you can get healthy!

    I was 340 pounds before my Weight loss surgery in 2002. I’m 160 and I’m 5’10” tall. It’s been a learning experience. I now realize I was addicted to artificial additives such as high fructose syrups, etc.

    i've had no help at my local dr surgery, i have type 1diabetes they sent me to see the nutritianist, i was vegetarian then, they were worried i wasn't getting protein and they told me i would have to take loads of vitiamins. I thought they would be able to advise me but theyknew less than me. I am now a vegan, i have watched loads of chuck interviewing so many, and chef AJ and the plant based drs.I am over two months as a vegan, i am learning through trial and error also i don't want to eat animals or eat dairy. We have goats a sheep geese ducks chickens at a field we rescued them could'nt imagine them ending up like our farm animals at the local slaughter house. I live in northern England and we've had problems at a terrible slaughter house. My health is getting better blood sugar going down.

    Thank you chef AJ you inspired me to loss weight I have to say After losing over 100lbs in 5 months I realized When it comes to weight-loss so many people want quick results so they easily give up. When you gained all that weight, it didn't happen over night . its the same when losing your weight. Never give up. Stick to your goal and Be Patient with yourself 🔥🔥🔥

    I’ve been sober 40+ continuous years from alcohol. I’m still active in AA and attribute my sobriety to the “psychic change” brought about by God. The science behind food addiction is controversial. I believe that the “psychological factors” behind obesity is massive. AA teaches that alcohol was “ but a symptom of my problem”! Alcohol was not the problem; I’m the problem and in my case I needed DIVINE HELP. I appreciate your teaching. Now I’m struggling with food, insulin-dependent diabetes, high blood pressure, and 60-70 pounds overnight! Thanks

    Having watched so many interviews by both Chef AJ and also by Chuck Carroll, I can say this is one of my favorites! Thank you both so much for your vulnerability and for being so honest about your past struggles with food addiction. I love to see Chef AJ share her honest struggles with food. We see such a variety of delicious recipes coming from her kitchen, but I have always assumed they were mostly prepared for the benefit of the audience and dinner guests. When Chef AJ said "variety is the kiss of death for an addict," my heart sank and I felt like she was telling my story. As much as I watch all these beautiful cooking shows, I think the sad reality is exactly as AJ says. Variety is the kiss of death for an addict. Thank you Chef AJ for this brutally honest comment. I will be watching this interview again!

    I love watching Chuck’s CZcams segments for Exam Room! I can’t believe his before pic. Seriously! Even if you are not an addict, eating unhealthy processed, fatty foods on a regular basis can kill you. I have had numerous family members die early from dietary disease and they were not obese. These foods are dangerous even if you don’t get obese from them. Compliance is what is best for everyone.

    Chuck and Chef AJ you just"hit the nail on the head." Big Business will tell you food addiction doesn't exist but then they tell their Food Scientists to research the next fat & sugar & fat & caffeine combo. They lie to customers to make money 💰💰

    The struggle is real. And I’m worried about going home. I’m stationed in Texas for army as an instructor and I’m in a little hotel room with a kitchenette and I literally started this née life style here 😌. 22 days in and I leave in two weeks going back to my keto meat eating husband. Fingers crossed I will stand my ground. I’m strong, I’m 50 and I do not want hot flashes any more. I’m feeling great. WFPB for life is my goal

    Great interview. I'll never forget this woman saying to me, "You're such a cute girl if you'd just loose a few pounds" that just hurt my heart bad. I remember I had been in a good place working out and and loosing a lot of weight at the time and it set me off course for years. It's amazing how cruel people could be. I don't blame that person for me going off course.....I can only take responsibility but it still hurt.

      oh HUN i'm so sorry that happened to you... and i know exactly how that feels bc it happened similar to me as well where as soon as i start loosing weight people say "oh you look SO MUCH better now"... and they try to come from a good place. I know i need to loose weight but its for my health and well being! im documenting vegan weight loss journey on my Y T channel and i love how i FEEL eating this way! yes.. of course i enjoy looking better but that doesnt mean i didnt love myself before ;) YOU are a beautiful person no matter what size you are!

      People can be really thoughtless with their comments about personal appearance. I never make comments about someone's weight loss or weight gain, unless they bring up the topic first, and even then I am very careful about what I say.

    Just had to add another big help for me and that's a form of intermittent fasting. I am not strict about this since life makes it difficult, but I eat a substantial breakfast around 7 am, an 11 or 12 am lunch, and try to finish eating a light supper before 4 pm. I am a really early riser by choice, and so early to bed to read until sleep. I am not digesting all night and my sleep has improved greatly. I don't usually wake up very hungry and can exercise before breakfast. Works well for me. Others might try some other forms of intermittent fasting to see what works for them. Routine helps life to flow smoother I think. Thanks for your patience for my wordiness, but thought it might provide ideas.

      For sure! any time of fasting that WORKs FOR WHO is doing it and can sustain it and enjoy it.. that's what matters. So do your IF the way it works for you. I'm doing a bit more strict fasting doing ADF but it works for me and I just hit 30 lbs lost last week on my weight loss journey im documenting Y T channel... still have a lot more to go but i love the combination of vegan with fasting :)

    This is a great talk. I wish I could get my 500 lb brother on board. They always tell me how thin i am. I tell them one bad cheat leads to 500 pounds. Obesity runs in my family. I’m always wanting to still lose 10-15 pounds. I’m not perfect. 5’6” 137 ish to 142.

    I have eaten whole food plant based for about 8 years and had my eight year old daughters birthday cake. I figure if I eat cake at all if my kids birthday I will be ok. We did get a dog that runs with me and is making me get out more. I am blessed to have that dog as she gives me an excuse to run.

    Great interview!!! I can totally relate to him as I had RNY also back in 2003. It’s definitely not the easy way out. I switched a little over 4 years ago to a plant based lifestyle.

    This was wonderful!!! Thank you both so much. I totally agree with you Chef AJ about variety, even in 100% whole food lifestyle can be a potential problem. I have a small list of foods that I eat, some not every day, but most of my days are similar and I can monitor quantities. I still find that at 5' tall and small boned, I can start to slowly put on weight since carbs are, and always have been, my downfall. I can actually eat a potato or two, too many and start to slowly see the scale go up. My healthy save is a large kale-based green smoothie every day with a good share of fruit. It takes me 3 meals to consume it all and I also have other cruciferous cooked veg and a reasonable amount of starchy carbs. No weight gain and sleep much better!!! We just have to find what works for us as individuals.

    Sorry I missed this live. Love listening to both of you, Chef AJ and Chuck. I didn’t have a weight issue (although gained 35 lbs in two years as a result of meds and numerous surgeries due to stage 4 endo), but I turned starch based vegan to be able to walk and move and take care of my family. Not only I gained my health back but I also lost the weight and I didn’t even try!!
    I consider myself lucky to have found and decided to give the Starch solution a go-mostly because it was my last resort. I owe my life to Dr. McDougal. Without his advice and knowledge, I’d be another ex-vegan, severely sick and on my way to become obese.
    You both are awesome 💕

    I am like Chuck, a recovering fat and salt/fast food addict! and when I get triggered with Taco Bell or some other fast food commercial/ad, I just imagine the food looking disgusting and tasting disgusting. I imagine myself starting to get sick to my stomach as I picture the food, and the craving rapidly goes away!

    I think for many of us, with being raised on the Standard American Diet, obesity is built in and the diet is addictive. If one has an obsessive/compulsive mother who is determined you are all going to finish every bite of food like our Mom was, it is a recipe for a diet disaster. Children learn how to eat as a child and if good habits are learned as a child, they do well to carry you through to adulthood. My mother forced us to all eat the same portions and if it was good for my sister and brother who were the same size though 2-1/2 years apart in age, I was 5 years younger than my big sister. This was not healthy for me and my brother even though he could better burn it off than me.
    Most people talk when they eat, we sat and ate a marathon race with every meal. I have learned to eat more slowly but sometimes I get into that kick of eating fast and it leaves me very uncomfortable. I do not always catch myself.
    No one means to develop addictions but being raised as I was, it was unavoidable. Though I can understand where my struggles with weight came from, and I have lost weight on the Vegan diet, there is a part of me which is not normal as I did not have a normal upbringing.
    I have learned to do everything fast no matter what I do, I even talk fast.
    When we raised our kids, they were always at a normal weight, as I was not going to force them to eat as I had been taught.
    The lessons we learn as a child are difficult to overcome. My interest in health is good for me but in some way I am re-parenting myself as my greatest desire is to live where I am in control and not what is in my refrigerator.
    So yes, today’s topic was revelatory in my case. And I think I understand where my food addiction came from.
    I think what we need are nutritionist who are also psychologists because my generation and the ones following, have not been done a service by the parenting or the food we ate.
    That’s why I love this show, it helps me recover who I want to be.

    Oh My..... I had gastric bypass surgery in December of 2009..... I was absolutely at rock bottom. Had tried EVERY single diet known to man... and then some of my own too! But... that was where I was at... I just HAD to have that first boost.... knew though that it was not a quick fix and that I HAD to take this time now, to get RID of all the things that put me in this place!!! 170 later..... still 160 pounds down... but I do NOT have cheat days, I STILL haven't had a DROP of pop, NO candy, cookies, cakes, pizza, etc, etc, etc... people have called me excessive and have even called me anal.... BUT..... for ME..... I just cannot do it! I see a piece of pizza and Mountain Dew as my first step back to 323 pounds! NO WAY!!!! NOT WORTH IT! So I loved your Nacho chip part! Thank you!

    My God I feel like the two of are describing my life. I'm still in process food purgatory. I'll do well for a while and then the craving comes for vegan burgers or pizza or chips and any progress I made goes straight out the window. I'm on a two week food binge. I realize I cannot be within a 50 mile radius of any of these foods. I also can't lie to myself saying since it's vegan it's alright.

    Had to throw the healthy version of chocolate chips away! You only use a couple tablespoons in a recipe and I was taking a spoon and eating the rest of the bag!😳

    does chuck have a what i eat in a day would love to see it.
    i think that is my problem i am a food addict you said it right verity is my problem i do great every morning because i do same breakfast everyday oats and fruit but then after that not so good

    If eating addictive junk food was made illegal and a social stigma (like heroin), most of us would be "in a dark alley" stuffing ourselves with it. You can't honestly deny that, and you're no better a person than a heroin-dependent fellow human. Same with your Starbucks and Dunkin habit.

    another great interview Chef !! I feel quite confident, i am now 31 1/2 months in, & have not yo yo'ed, . Quite confident, that i will never go back to the SAD diet, unless i lose my mind & someone else feeds me it. But, thinking i might not lose my mind, since wfpb is so healthy & illnesses are cured by it,. I also think, variety is bad. I see all these vegan desserts being made by you & others, i didn't think u eat them, but, i don't think it would be safe, for me, to count on being able, to just have 1" !! Anyway, take care all I was wondering tho, about loose skin for him, i didn't hear it addressed here. I was only 238, 5'1", & size 3x , but i have quite a lot, under arms, upper thighs & lower belly. I was big , battling thin 55 yrs, i am now 68 & healthiest & happiest i can ever remember , i still thank you for being on YT & be being guided to your channel , ty ty ty xoxo

      They have higher water content unlike potatoes that are a dry starch
