The thing in the pots it’s called Khli’a it’s beef bacon with beef fat it’s soooo delicious we traditionally make it with eggs in the morning for breakfast
We didnt get the chance to try it but next time we come back it will be top of the list!

This is meat seasoned with salt, pepper, cumin, red pepper, dry coriander and garlic It is dried in the sun for several days. in this phase it is called Qadid . we can use it for exemple with couscous or lentils.
If then cooked with olive oil and sheep fat in this Phase this called kalii'h , so that it can be kept for a long time and can be used in several recipes, the most famous of which is Msamen with klii'h 😊
we can do it also with tomatoes sauce Petersilie garlic and eggs 🥚🥚🥚us a quick dish .

No beef bacon. Just dehydrated and cooked meat ( beef or veal lamb)stored in the fat it was cooked in

I know irish people one of them was my boss and i visited a city called Killybegs.I know amercians as i visited this huge country in 1993.
Killybegs is well known as the home of the Irish fishing, was your boss a fisherman?
