ingredients:
for Stock:
Beef 1 kg with bones
bones 250g
garlic 7-8
ginger 2 inches piece
onion 1 medium 165g
Salt 2 tbs or to taste
coriander 2 tbsp
fennel seeds 2 tbsp
cumin 1/2 tbsp
cinnamon 2 inches stick
Black cardamom 2 large
star anise 2 large
mace i medium piece
bay leaves 2 large
cloves 6-7
water 3 litters or as needed
for pulao rice:
oil 1 cup
onion 2 medium 350g
cumin 2 tsp
bay leaves 3-4 small
star anise 1 large
Green cardamom 4-6
garlic 8-10
ginger 2 inches piece
Green chilli 12-15 (spicy & small)
salt 3/4 tbsp or to taste
Black pepper 3/4 tbsp
all spices 1/2 tbsp
yogurt 3/4 cup 150g
tomatoes 2 medium 250g
coriander 1/2 cup
Basmati rice 1kg (5 cups)
for steam:
fried onion
coriander 1/2 cup
