- New Orleans native Charlie Andrews demonstrates how to make New Orleans style Crawfish fried rice. It consists of day old, cooked rice and crawfish tails that are sauteed in seasonings, spices and soy sauce. You can get about 4 to 6 servings. It's a different take on fried rice, New Orleans style. Absolutely delicious. Hope you all will give this recipe a try.

Charlie, I eat Oriental type fried rice everyday. This recipe will replace a few days in the rotation. I'll probably use shrimp as crayfish isn't readily available here. All the best and thank you for your "million dollar" smile and recipes.

Hello there! I purchased the crawfish tails from my local grocery store.
Do you use cold rice?
The rice was brought to room temperature before adding. You can still add the rice if it's cold. Hope I was able to answer your question. Thanks!
