    Notes- Fried chicken is a popular southern classic that is most commonly associated with the southern regions of the United states and the African American community. It consists of pieces of chicken that has been coated with a batter and deep fried, pan fried, Air fried or pressure fried. Dirty Rice is a creole dish from Louisiana where the rice gets it's Dirty color from being cooked with small pieces of chicken gizzards, ground beef or pork. It also goes by the name Rice dressing. The difference between Dirty Rice and Rice dressing . An Authentic Dirty Rice is made with chicken gizzards and chicken livers only while Rice dressing is made of Ground beef and pork. The ingredients for rice dressing is also interchangeable, as you could use the ground beef, ground pork, chicken gizzards and chicken livers all at once or use or one of the other.

      Wendy Dear You are right, I would never want to eat anything from a dirty kitchen and I am glad you noticed that because I have also noticed how very clean Charles kitchen and his stove and oven are. I wish I could get sown on my knees to clean my oven real good, but my knee hurt to much and I can't get back up. I have to hire a young Lass to come and clean my appliances 4 times a year. She has been doing it for a long while for me. I am 98 yrs old and she started cleaning my appliances in her late teens, she is now in her late 20s. But a clean kitchen is a must.

      I can 70% agree with that, if I didn't live in Houston. My style of cooking is a mixture of southern style Louisiana, my gumbo and dirty rice is the bomb! Funny enough, no one in my family is from Louisiana, but of course we're right next door, so I think our way of cooking became interchangeable. However if I was from Louisiana I would agree 100%. 😊

    I loved this video! My grandmother was from Alexandria Louisiana and she made the best dirty rice and fried chicken. Her and my grandfather cooked so well and they cooked a lot of food everyday, good old soul food. People in our family came over on any given day to eat because there was always plenty to go around. My Nana was a chef in her perfession and could cook anything from shrimp and grits to Beef Wellington. Your cooking reminds me of how I grew up.

    I could almost smell that Dirty Rice with those seasonings, I know that was good!!! My aunt makes her Dirty Rice very similar to what you showed, except she using only green peppers not the red. I know the chicken is good too, but that dirty rice is the main attraction. Lots of work but well worth the effort, Thanks Charlie!

    I made dirty rice using your posted recipe from the past. OMG it was so good then AND it was my first time to prepare. I didn't tell my sons that chicken gizzards was in it until after they kept raving over how good it was. It changed their life and their opinion about it. 😁

    Mr. Charlie, I enjoy your channel so much. I can't stand youtube cooks who make "creole this" or "cajun that" when they have no idea what they are talking about. Like labelling something as cajun, then putting tomatoes in it, which makes it creole. Duh! I am a New Orleans native, and you are THE REAL DEAL! Thanks for all your videos, Mr. Charlie.

    I'm from Lake Charles and we call it rice dressin. My mom use to grind the chicken gizzard down. It took her hours to make but when it was done,,, maaannn. Also she use to take the bell pepper and stuff the rice dressing in it and throw it in the oven this was every Sunday after church with a roast

    Charlie, thank you so much for your informative videos. When I cook something for the first time I always watch 3 or 4 videos of different people making the dish, I also research some recipes on other sites and from cook books. I take what I like and basically make it my own. However, your recipes and videos are always the most informative for what I’m looking for. As a matter of fact I used your exact gumbo recipe for a Christmas party and it was gone! It was damn good gumbo and it got rave reviews. Thank you again and keep on doing what you’re doing!     Mr Charlie, this reminds me of my Mother’s dirty rice. She only fixed it for holiday dinners. I loved it as a child but as I grew older I didn’t like the flavor anymore! She tried making it with hamburger but it was just not the same. Brings back great memories. My Daddy was Cajun and had to teach Mamma how to cook the things he liked.
    I enjoy watching your videos so much because every once in awhile I hear the sound of my Daddy’s voice in yours. He’s been gone since 1964, most of my life, so I love hearing his sound creep in occasionally!
    Sorry for the long ramble!!

    I cook my rice the same way. I boil it halfway then steam it the rest of the way and it always comes out nice and fluffy. Everything looks Delicious! Thanks for sharing! My husband's from New Orleans btw. All your recipes are spot on.

      @@CharlieTheCookAndrews I thumbs down because you didn't know how to CORRECTLY wash and cook rice. Why tf did you wash your rice after it cooked? You're suppose to wash it BEFORE. Who taught you how to cook rice? They obviously aren't cooks and neither are you. Because any REAL cook would know that you're suppose to WASH your rice 3 times first, before you cook it. And you don't use measuring cups. Just use your finger. You need an Asian friend
