  • How to: Smoked Fish Dip - Key West Kingfish
    After finally catching a Kingfish, or at least watching Fred catch a Kingfish, I finally was able to make a classic Key West treat, Smoked Kingfish Dip. Since, Kingfish is an oily fish, often it is overlooked as a straight to the pan type fish. That oilyness however makes it great for smoking. The other popular fish is Amberjack. I started by fileting the Kingfish and leaving the skin on while cutting into manageable pieces. Those were placed in a basic "dry" brine consisting of equal parts salt and sugar. The salt pulls moisture out of the filet while the sugar gives it a slightly sweeter/molasses flavor. After brineing for 4-6 hours (overnight is fine) a lot of liquids is pulled from the filets. The filets are rinsed and patted down. In order to get that smokey flavor, it is very important to allow the filets to air dry for an hour or two to create a Pellicle, a shiny sticky layer caused by the bringing of proteins to the surface of the skin. This layer is what the smoke will attach to and give that rich smokey flavor. After starting the smoker, hard wood chips are soaked and placed on the coals creating a nice low heat smoke. Based on the cooking temperature will dictate the length of time the filets need to cook. Once completed, the filets skin are removed as well as any blood line meat. The filets can then be flaked into preferred size. For the dip, it can be as simple as some mayo, lemon, salt and pepper. For a more fancy mixture, a base of cream cheese, sour cream, and mayonnaise can be used, adding additional spices, vegetables, and hot sauce. Mix well by hand or in a food processor. Some prefer a smooth dip and some a more rough texture. Serve with some crackers for an amazing snack. The smoked filets can also be eaten plain, or the shredded pieces can be used by mixing with eggs for an amazing scrambled egg breakfast. It also makes a great salad topping. Enjoy.

    Last time I fishing the keys (I'm from CA), one of the neighbors next to the airbnb I rented offered me some of their smoked king fish dip they made, it was some of the best dip I have ever had. I ended up trying some of their smoked king fish straight up. My god it was good.
    Cant wait to come back to the keys. Love it out there.

      Med-low as I used the same charcoal based smoker. Did a lot of different recipes from candied to spiced. Salmon is a great fish for smoking.

    hello man, whats up? first of all i love your videos, they have inspired me to fish using different styles and baits. now i have an issue with something and i would apretiate a suggestion, a video or even an advice about it... recently i got a 3/8 in mesh cast net for catching bait... sadly it got caugth on a rock at the bottom and now it have 3 small holes on it... and i cant afford another... you are a veteran fisherman and you use a castnet frecuently so i ask you... how do you repair your cast net when it gets teared? there is any really visual video or something where i can learn how to repair it? please, im new to cast nets and actually im very sad because i cant find any good video explaining how to care/repair them

    Looks good. We toss them back unless they got that halco 190 max all through the gills or something. Anything you need to brine and smoke and mix with other stuff is just along for the ride. They are ok fresh but I don't know something about cleaning them in 100 degree heat at the ramp and seeing that green tint meat. Next one that jumps on our mahi baits that we can't release will goto a dip and the rest to the dog.

      I couldn't hold back either. The first filet went down just as soon as I got it off the smoker. It's kind of like opening a bag of jerky. You can't eat just one.

    'Kingfish' where I'm from look completely different to that, what you call a Kingfish is a King Mackerel right? (I really don't know)
    The Kingfish where I'm from are called Yellowtail Kingfish, they're a whole lot uglier and less mean looking then your Kingfish, but I'm pretty sure they fight a lot harder. They're a kind of Amberjack so you can compare them to the Amberjack that you catch.

      Yea, Like Kayak Fishing SoCal said, they have them on the Pacific side. Much better eating than our Amberjack. I think somebody dropped the pages of the fish names on the way over to Australia and just covered it up. Same species just names scrambled. I do see the fish that Rodney Harris catches and there are some totally different species that I haven't seen before. He is on the west coast of Australia.

    Good instructional video, Steve. I now know what to do if I catch any Kings. How do you know when they've smoked enough? X minutes per pound, internal temperature (use a probe?)?

      140 degrees for 30 minutes. I just keep an eye on the filets as they aren't too thick. For fish dip, you can be a bit too dry and still be okay so not such a huge deal.

      William Martin everglades is a type of spice it works with almost everything and this dish should work with other fish

      Yup. What David said. Everglades is a Florida spice specialty. Not sure how far around the country it is sold. Smoking works better with the more oily fish. Less chance of drying out plus the smoke covers the fishy taste often found with oily fish.

    Why leave the best smoked fish outer (NOT THE SKIN) out of the smoked fish dip? After all,
    it is smoked fish dip....! The full, rich flavor is in the golden outer layer.... Where I'm from the
    golden smoked outer layer is definitely added to the fish dip... Is what gives the rich, smoky
    flavor to the dip.....

      In The Keys when we catch a smoker kingfish we make enough for friends and neighbors with this recipe. And when your neighbor catches one you get some fresh dip too. It’s a great tradition that brings people together. But every neighborhood has a guy who just gets it from a restaurant. Sounds like you’re that guy
