Y'all have no idea how much I have been waiting on this! It was SO GOOD! Not to smoky,and just the right amount of spice! I had some people at work try it, and they loved it!

I have a Cook Shack smoker that is almost exactly the same as your Smokin Tex. My old Boss bought the Smokin Tex after I wouldn't sell him my smoker. Both are VERY well made. You're going to love it.

I really enjoyed this and I need to get a dedicated cold smoker. Right now I run a side smoker and have to keep the fire down really low. I'll have to give this a try. Smoked fish dip as fantastic stuff and something we don't have often enough. Thank you for putting this together and sharing!

I have lived in Virginia, and no oysters compare to Gulf oysters! These have the best taste!

Hey Rus I made some of this about a year and half ago using some Amberjack that I caught off the Atlantic coast of Florida. It was downright spectacular! I think you can use pretty much any fish, as long as it's fairly meaty. The recipe I (loosely) followed was very close to yours. I can't wait to make some more soon! Thanks so much for the videos as always. I'd like to see your impression of smoking the same kind of fish on that Lone Star Grillz pellet smoker someday.

It's a staple down here Jorge. You can buy it premade in tubs from our local fish markets, but I love making it myself. Very easy but rewarding.

That is a nice smoker ....I love smoked oysters , never had the chance to smoke em myself , I would always forget when smoking fish .... I have had em in the can like sardines are packed in , but I can imagine fresh smoked is a 1,000 % better.... Hope to see you at 4 o'clock today in the live stream.... It's super easy to do Jeff. I remember that yellowfin tuna dip we had that day. This is so close to that. I'm pretty sure you will love it. Yeah that's the pepper cannon. I love this thing! Cheers brother!
Had to look up that buttonwood. In the into description states it is used to make charcoal. How strong would you rate that, oak like, pecan or fruit wood?
Has a great flavor, not overpowering. Kinda hard to describe. I normally use Alder wood on fish, but had to try this buttonwood and glad I did. It's really a Florida style fish dip, so why not use wood from Florida to smoke them in. That is some of the most dense wood I've every used. Very very hard.

145°F is done like any other fish, but with smoked fish I go by texture as I explained in the video. They are slightly drier than typical fish. Just my preference. No secrets on this channel.

I'm need some of this in my life. I've never smoked fish before I have always heard it's hard to get the smell out of smokers.. Any truth to that?
Hey Jaxx! Yes, it can take on a fish smell, and that's the reason I needed a dedicated smoker just for fish and seafood.
That wouldn't last long around my house,gotta try this got some mahi in the freezer from a trip last year.
