As soon as you block a kick you should counter back with your own kick or punches. The key is to not lose your balance when blocking the kick and return your own strikes as quick as possible. Also use your long range weapons like your jab more. If you jab and they shell up you may be able to then combo off.
You'll get better with time. It takes hundreds and thousands of hours to learn to fight full contact against another trained martial artist. Front Snap Kick, then Thrust kick off the back foot, step through the kick and jab-cross-hook, etc. Use your kicks to set up range for the punches. Jam round kicks by chop blocking the upper leg as you step in and counter with a straight punch. Don't let the round kick fully evolve its range of motion. You also might want to work on Small Circle Jiu Jitsu and Clinching skills. Tie up your opponent's hands and land some elbows and knees of your own, etc.
Being a taekwondo fighter myself everything you said about your opponent was right and you should have capitalised on his taekwondo background by barreling forwards with your punches, you will take some hits vut once youre inside its way easier
