Would this work for a clover deer food plot? I don’t car about the look but just knocking it down to 6-8 inches.

You shouldn't have any issue knocking it down, but the Rammy is meant to rest on the ground when in use. It's max height when on the ground is 2 and 3/4 inches.
That being said, you could lift it off the ground with the winch and mow in the air. When off the ground, there is more weight on the engine side and the unit itself weighs around 250 lbs so you will want to make sure your ATV/UTV has some ballast weight and a strong enough suspension.
