COOK WITH ME | Roasted Sweet Potato & Roasted Red Pepper Soup

  • Happy Wednesday Y'all ! This week I am bringing you a savoury option that you can make in a pinch at home for a cozy night in! This soup is simple and easy to put together and can be made in as little as 30 minutes but best to let the veggies roast for at least 30-45 minutes for optimal flavour! Throw the vegetables in the oven and you'll have enough time to do a couple things on that to-do list, while your dinner is cooking!
    This is a cook from your heart kinda recipe! I don't measure often when I cook and I let my taste buds do the talking! So don't be afraid to taste your food as you go and adjust seasoning as needed.
    Recipe below:
    Sweet Potato & Roasted Sweet Potato Soup
    Ingredients:
    - 4-5 Sweet Potatoes
    - 2-3 Red Bell Peppers
    - Olive Oil
    - Salt & Pepper
    - Paprika
    - Onion Powder
    - Garlic Powder
    - Oregano
    - A splash of Heavy Cream
    - A knob of Butter
    - 1/4- 1/2 cup Chicken Stock, as needed
    Procedure:
    1. Preheat oven to 400 degrees F.
    2. Cut sweet potato and red pepper to a medium dice, (rough chop)- the smaller you cut your vegetables the faster they will roast, so if you are in a time crunch just cut your vegetables in a small dice.
    3. Place vegetables in one flat layer on a large baking sheet lined with parchment paper.
    4. Season vegetables with salt, pepper, oregano, paprika, onion powder, garlic powder. Season liberally with all of these seasonings, drizzle olive oil over all of the vegetables evenly. Then, toss the vegetables together to coat everything evenly, and flatten back out into a flat layer.
    5. Roast vegetables until knife tender and are soft enough to cut with a butter knife.
    6. Once vegetables are roasted, in a high speed blender, blend vegetables, chicken stock, and a splash of cream.
    7. Once everything is blended and smooth pour into a large stock pot and add a knob of butter and if the soup is too thick you can add a bit more chicken stock to thin it out as well as a bit more cream if you want the soup to be a bit more rich.
    8. Taste along the way once your soup is in the stock pot and if you need to add more seasonings go ahead at this point.
    9. Serve and enjoy!
    Try serving with a side salad and a sandwich to make a complete meal. Or simply serve up with some crusty bread for dipping!
