Quick Sweet potato and coconut milk soup

- A super simple recipe that's not only healthy but delicious. Sweet potato is such a miracle ingredient, it tastes so good and it's a super healthy food, talk about a win win. Plus it's easy to prepare. This soup can be made in 15 minutes plus cooking time. If you can peel and roughly dice vegetables, you can make this. Garnish with fresh coriander for that exotic flavour. If you have fresh ginger, use that instead. This is a fusion between french and Thai food. It's also called a veloute de patate douce in French. Happy cooking.

Funny, my regular potatoes went bad and I already had started onions and carrots for a potato soup...still had two good sweet potatoes...then I searched sweet potato soup because I've never made one and this looks delicious.
I just happen to have coconut milk in my pantry also, so I am set.

This recipe was awesome! I followed it exactly! Except! (Gotta love the exceptions lol) I used fresh ginger instead of powdered because I did not have the spice. And I couldnt find a chili so substituted it with a jalapeño. Warning with that… unless you love spicy food. Use a third of the pepper 😅.

Michael Fiducia I love your persistence Michael, it will probably eventually pay off. The only issue is in Australia we don’t slaughter baby lambs and therefore the sweetbreads here are tiny. Maybe one to do next time in Europe 👍

Actually I meant veal, it must be the Bali heat affecting my brain (in Bali right now). We don't have young veal in Australia. We used to as I had them on my menu, yes I had sweetbreads.
