How To Make A Delicious Egg Curry - Egg Masala Gravy - Egg Curry Recipe

In this video I showed step by step how to make a delicious egg masala curry. This egg curry is simple and easy to make and if you follow this recipe step by step you will be really proud of yourself.
Ingredients required for making egg masala curry - serves 4
* 1 egg per person. Allow water to come up to a boil. Gently place the eggs in boiling hot water and cook for ten minutes. Immediately remove from water after 10 minutes and peel after they cool down.
* 1 medium onion
* 1 teaspoon finely grated garlic ( I took 3 large garlic cloves)
* 1 teaspoon finely grated ginger (1 inch length)
* 3 tablespoons oil
* 1 & 1/2 teaspoon salt
* 1 teaspoon sugar
* 1/2 inch length cinnamon stick
* 2 green cardamoms
* 2 cloves
* 1 teaspoon tomato paste
* 1/4th teaspoon kasoori methi (dried fenugreek leaves) (optional)
* little less than a cup of hot water
* 1/2 teaspoon garam masala powder
* cilantro (coriander leaves) for garnish
For making yogurt spice mix
* 4 tablespoon plain unflavored yogurt
* 1 teaspoon kashmiri red chilli powder or 1/2 teaspoon regular chilli powder
* 1/2 teaspoon turmeric powder (haldi)
* 1 teaspoon ground coriander (dhania powder)
* 1/2 teaspoon ground cumin (jeera powder)
* 4 tablespoons water
For marinating eggs -
* 1/4 th teaspoon turmeric powder
* 1/4 th teaspoon chilli powder
* 1/4 th teaspoon salt
* 1 teaspoon oil
Serve this with rice/roti/paratha.

I'm compiling my fave recipes of yours along with other recipes I like from other cultures and also my own in my new notebook so I always have it at hand. I'm making this egg curry now, but without yogurt and with tomato since I don't have any yogurt. I'll be following steps from some of your other videos to make a tomato curry without yogurt to do that, but using these spices. I've got some eggs boiling right now and I thought this would be a great lunch for today. Going to make some extra to have the eggs for breakfast. I'm going to try to get another yogurt this week though. I just didn't want to go anywhere today, I feel like I'm coming under the weather a bit and need to rest to get rid of it ASAP. HOWEVER, I'm writing this recipe IN FULL of yours as the first recipe in my notebook! I'm going to also save a couple of pages for the spice mixes of yours that you shared so that I always have those recipes as well. The notebook is large enough to be useful, and small enough to fit in my little purse-backpack that I can carry with me to the grocery when I need to buy ingredients. THIS WAY maybe I won't always be out of something! 😂😂After I've purchased some more garlic (using the rest on this meal), tomato and yogurt I'm going to look at some of your other recipes with just vegetable curries. I saw a thumbnail of cauliflower on one of yours so maybe I'll do that first! This way I can spend a day cooking different veggie curries, let them cool, and add them to the fridge to have as a side dish to my other meals throughout the week, or just already finished in general. I'm going to add fried zucchini to this one that I'm making now, at the end.

Hi Bumbi, I'm loving this idea. I had no clue that eggs were used like this in curry type dishes. Thank you for teaching me. Sorry to ask another question, but how hot is the Khasmiri powder? Compared to say, a Habenero pepper?

O yes there are varieties of egg curries in Bengali cuisine (West Bengal is a region in eastern part of India).
Kashmiri chilli powder is mild in terms of heat level compared to regular Indian chilli powder. It has this vibrant red color so it brings in a beautiful color to the curries with less of heat but it can still be overpowering for some people so add less than the stated proportion to start with. It is definitely milder than habanero.

Can you use ground fenugreek instead of the leaves? I have whole fenugreek to grind, but no leaves. This looks delicious!!

Ground fenugreek is not a good substitute for dried fenugreek leaves. Kasoori methi is totally optional. Your curry will still be delicious without it. Thanks for leaving a comment.

Here we have the absolute secret of getting that wonderful curdled texture to curry sauce that you could never get by making an English style flour thickened curry sauce. It's really the signature of curry houses all over the UK. I'm going to make this soon also because I'd never thought of marinating the eggs after cutting gashes in them to get the flavour inside.
