    This month we're revisiting the 1906 cookbook, 101 Mexican Dishes! This recipe caught my eye while I was making February's Chile con Carne, because of the typo in the book, "Chonzo", and how simple the recipe seemed.
    Chorizo is typically made with ground meat and a wide variety of spices, let's find out how this simple recipe with few ingredients comes out!

      Bahaha, thanks! I go through cycles where I get really good at it, and then I don't do it for a while and I end up having to use two hands and still have a messed up crack 😂

      Thank you!! Haha it was tasty and fun to make! I definitely think I’d still prefer the tube stuff for the texture and more depth of flavor, but this was awesome to make and I’d love to play around with it and see how it can be made better!

      Thank you!! Really happy with how it came out! At first I was unsure about it, even through the initial taste test, I was unsure 😂 All I could smell in the room was the wine from the cooking process haha, but after I reheated the leftovers the next day, I was really surprised with how much it smelled and tasted like chorizo 😂

    so great! I love this. I have a few old cookbooks from my Portuguese grandparents. It would be fun to see what you could do with them haha (one of them doesn't even have measurements for the ingredients, just a list of ingredients and basic directions) 😂

    My brother, you know I love when you do these types of videos. Everything ties together so nicely. I LOVE the hair. 😀😀. Cute clay pots. I see them at La Michoacána Market, but I am scared to get one for fear of it breaking. Do they need to be seasoned or given special treatment? Awesome job as always brother! Sandee

      Thank you!! Haha I love doing these vintage videos, definitely the highlight of my month! 😂 Yeah the clay pots are fun, I’m not totally sure of the seasoning process for these, I THINK you have to cover them in a water/cal mixture or something đŸ€” The ones I have, my mom bought for me in Mexico and she took care of all that for me đŸ€— Haha, but yeah I think you just need to be careful of extreme temperatures and making sure to allow it to slowly heat or cool, and not trying to wash it with cold water or put it in the fridge while it’s still hot.

      @@Maikoh LOL. Lucky you! Your mom has you covered. I recently bought a tagine and I had to soak it overnight and paste it with olive oil before use. Mmm..Chorizo!!! 😋 We're so accustomed to the modern red version- I wonder, Does the wine mimic the vinegar flavor?

    • @Maikoh
      @Maikoh  Pƙed 2 lety

      Haha, right! I'm wondering if I can finely chop up cooked meat and imitate it a little more still? đŸ€” Haha, idk. Yeah, the wine gave it that kinda vinegar-y flavor! And it was actually even better after reheating the next day!

    • @Maikoh
      @Maikoh  Pƙed 2 lety

      Haha! Around here, chorizo is usually a ground sausage meat but it’s usually sold in a plastic tube/casing and meant to be squeezed out and cooked like ground meat, rather than an actual sausage form. I don’t think I’ve ever had chorizo in sausage from đŸ€”đŸ€”

    • @AngelusBrady
      @AngelusBrady Pƙed 2 lety

      @@Maikoh Definitely unexpected!
      Yeah. Dried chorizo is basically Spain's version of salami. I think Brazil and Portugal may have their own versions as well. I'm more familiar with the Spanish version since I see those used a lot in Spanish-American paella.
