@@tatageuu02 Salted butter. I didn’t add more salt. Just relied on the salt in the butter. I made these for my sister’s work colleague over a month ago and they are still talking about them 😊

How can you make them without measurements
i liked how you mixed the butter with the rubber spatula and then added suger with rubber spatula before using the mixer. I will try that next time as it seems like just using the mixer takes forever.

Ingredients:
120g Butter
75g Sugar
40g Almond flour
2g Salt
30g Brown butter
2 Egg yolks
130g Cake flour (For chocolate flavor: 120g cake flour + 10g chocolate powder)
Instructions:
Step 1: Brown Butter
-In a saucepan, heat the 120g of butter over low heat.
-As it melts, milk proteins will rise to the surface.
-Continue heating until the butter turns a beautiful amber color, and brown particles form at the bottom.
-The aroma should be like roasted nuts.
-Remove from heat and let it cool.
Step 2: Preparing the Cookie Dough
-Soften 120g of room temperature butter.
-Add 75g of sugar and whisk until it becomes pale and fluffy.
-Sift in 40g of almond flour and add 2g of salt. Adjust salt to your preference.
-Mix in 30g of the brown butter.
-Incorporate 2 egg yolks into the mixture.
-Sift in 130g of cake flour (For chocolate flavor, use 120g cake flour and 10g cocoa powder).
-Mix gently using a cutting and folding method. Avoid overmixing; stop when no dry flour is visible.
-Step 3: Shaping and Chilling
(Follow the same steps for chocolate flavor but replace some cake flour with cocoa powder.)
-Squeeze the mixture into molds for muffin cakes or similar, filling to about 1cm in height.
-Refrigerate the molds for 30 minutes.
-Flatten any surface bumps with your fingers.
Step 4: Baking
-Preheat your oven to 150°C (302°F).
-Place the molds in the oven and bake for 35 minutes.
Step 5: Cooling and Removing
-Allow the cookies to cool at room temperature.
-Gently twist and press the edges to remove them from the mold.
-Due to the whipped butter, the cookies will have a light and airy texture with lacy edges.
-Once completely cooled, the cookies become very crispy.
-The inside will also be airy and fluffy.
Step 6: Storage
-Store the cookies in a sealed container at room temperature in a dry place. They can be kept for 15-20 days.
From the 120g butter only 30g is used after browning, wasn’t clear for me 😅

Of course, you can heat a bit more, and any excess can be refrigerated for future use without the need for reheating.😊

That’s a very good idea(I’m a bit overweight, too!), and it gives me a thought. If I were to cut the butter as you did, how do you think they would taste if I added an extract I picked up recently labeled “butter cinnamon” flavor? I haven’t used it yet because I can’t decide what recipe to use it in; but, it seems that, since the extract has not only cinnamon flavor but also butter, it might work. What do you think? I am 74, but I have never been a very confident cook or baker. So your input is greatly appreciated! Thanks!

So I kept the hole black butter and reduced the regular butter to 90g, I think it will probably work with 80g too - I always do that when I can, I reduce the butter little by little and see the effect, you can cut off lots of calories!- I think some cinnamon would be nice! But use only one small spoon! Maybe just a pinch of ginger too! And you can adjust to your taste within time too =) maybe if you want a little bit more cinnamon add 2 spoons, but I don't recommend more than that, it can be too strong.
