    I and my friend, Gold (Nigerians) would be trying Ghanaian food for the first time. We tried the popular Ghana jollof rice, Waakye that includes the Rice and Beans, Garri, Spaghetti, Shitor and the Waakye stew.

    Waakye is from the northern Ghana and every Ghanaian likes it, you add gari cuz it’s too plain without it. Some people likes to add vegetables and spaghetti to balance the meal some too will not add the spaghetti and vegetables like myself as it makes it too heavy .
    Waakye is made from rice with black eye beans cooked with dry millet leaves that gives it that colour

      To complete it u need cowskin 'kpomo' beef ,fried fish and eggs and the fish sauce shito..this shito can last for over a year without spoiling that is one good thing about it can be eaten with almost everything name it : rice , gari ,yam 'abolo' etc l enjoy it as a bread spread !check it out!🤣

    I'm American and learned how to make Ghanaian Jollof rice and other dishes from my Ghanaian sisters a few years back. I married a Nigerian and he was jealous that I knew how to cook Ghanaian food and not Nigerian food. So I learned from a recipe; here on CZcams how to make Nigerian Jollof; he ranted and raved about how delicious it was. I personally like Ghanaian Jollof rice better.

    1. History: Fufu/Fufuo means "mash or mix" in Twi (language of the Akan ethnic groups in Ghana) and is a specific staple food for the Akans in southern part of Ghana and Ivory Coast, West Africa but now commonly features in many West and Central African countries in different textures but not every doughy African foods are Fufu.
    Eg. is saying in Twi "fufu 3to (mash spicy ripped plantains mixed with palm oil eaten with peanuts) or fufu Gari Foto (mix spicy Gari with palm oil"). Before colonization and the introduction of cassava and plantains to the African continent, the Akans used cocoyams to make the Fufuo/fufu because of it's softness.
    Fufuo (also means white and derived from the white color of cassava) is soft doughy swallow food made out of boiled cassava mixed with plantains or coco yams and pounded together in a mortar (waduro) with a pestle (woma) unique to the Akans, and only eaten with liquid soups (nkwan) such as, Light soup (Nkrakra nkwan), Abenkwan (palm nut soup), Nkatenkwan (peanut butter soup), Abunabun soup (green vegetable) with meats, fishes, snails, crabs, mushrooms and okro (nkruma) on the side. Fufuo/fufu is usually served in Asanka or Ayowaa (an earthware bowl; black or red in color) with the liquid soups poured on the Fufuo/fufu to look like an island which helps reduce the stickiness while eating.
    *Right way to eat Fufu:
    In between both the index and middle fingers cut a piece of the Fufuo/fufu like a scissor, tap a hole in it, scoop the soup and swallow, never chew the Fufu in order to enjoy the taste of the soup while swallowing.

    In the typical Akan region in Ghana, Fufuo is mostly use but Ghanaian businesses men used only the name Fufu when they processed the authentic Fufuo/Fufu into cassava/plantains /coco yam flour 1. czcams.com/video/SszPhlmWDJE/video.html 2. czcams.com/video/Z_XeI7n3aj8/video.html some years ago and sold mainly in Ghana markets in most western countries such as America because they couldn't pound the Fufu just like they would in Ghana, as it's very noisy when pounding and it became popular among other Africans and parts of the Caribbean and now Nigerians are calling almost every African doughy foods as Fufu even though they have their names; Nigerian Pounded yam (Iyan), Akpu (fermented cassava dough), Amala, Eba, semolina, oatmeal, cabbage. Nigerian soup textures are considered stews in Ghana since Ghana soups are generally liquid texture which aide in swallowing the soft Ghana Fufuo/fufu. Ghana stews [Palava sauce/Nkontomire stew (Egusi soup) or garden egg stew, egg stews etc.]. The thick textured Ghana stews goes with plain rice or Ampesie (boiled cubes of yams, plantains, cocoyams, potatoes cassava, Kooko/ taro root etc.) in Ghana. Okro stew or soup goes with Banku (fermented cassava/corn dough similar to Nigerian Akpu dough) in Ghana.
    Just like Bofrot which Nigerians call puff puff comes from Ghana because in the 1980s, Ghanaians brought it to Nigeria and it was Ghanaians who were frying and selling Bofrot/Puff puff in Nigeria until Ghanaians were sent back to Ghana but now most younger Nigerians will try to tell you it's Nigerians inventions
    Also try Ghanaian🇬🇭 foods ♥️👍🏽. Try the original Fufuo/fufu from Ghana with Nkrakra soup (Light soup), peanut butter soup or palm nut soup. Waakye (waache) with Shito sauce, Ghana Jollof rice, Ampesie (boiled cubes of yams, plantains, cocoyams, potatoes cassava, Kooko/ taro root etc) with Ghana stews [Palava sauce/Nkontomire stew (Egusi soup) or garden egg stew, egg stews etc.]. Dokono/kenkey with fish and Mako sauce and Shito. Meat pie, Kelewele, Bofrot, fried yams with fish, Achomo, Ghana Chips, Sobolo drinks, Burkina drinks, Ghana Malta Guinness, Fanta, Asaana drinks, Kebab, chichinga/suya, Ghana sugar bread, tea bread etc.

    Waakye is really common in Ghana and it’s usually eaten in the mornings (you wake up and go to your local waakye seller and enjoy-especially on Saturdays😂). Sometimes, it’s hard to find waakye in the afternoons because it gets finished fast😂. You can eat it with spaghetti, salad, garri, plantain, beef, wele (I’m not sure if that’s Nigerian pomo🤷🏾‍♀️), fish, egg, sausage, shito and the waakye stew. It’s commonly eaten in a leaf (I guess it adds more flavor).

      The waakye is Hausa dish from northern Ghana. Certain leaves are added to the rice n beans to give that unique color.

      Very true when I was in tertiary I had a Nigerian friend who cooked great jollof. The difference was she used the Ghanaian method.

    And for the jollof, people add different meats depending on your preference (some people add a variety of meats to one pot of jollof😂). Jollof and goat meat is my personal favourite. I think you should more Ghanaian dishes though. Definitely try fufu with any of the soups, kelewele (spiced fried plantain), red red (plantain and beans stew), etc... xx

    Waakye is from northern Ghana but its eaten all over the country, some add salad to the gari and spaghetti but I like it with only gari. Its very nice and nutritious.

    In Ghana, you don’t eat waakye with spoon ooh, you have a different level of feeling when you eat it with your hands. Waakye is a delicacy from northern Ghana but it is enjoyed across board by everyone. It is actually eaten everyday and personally it better than even jollof

    The jollof and waakye can be enjoyed with Shito or the sauce, salad, gari and any kind of protein here in Ghana. The waakye has that colour because of a particular dried leaf used in preparing it. You can mix gari with shito or sauce and enjoy it with any protein and vegs as a complete dish 😋

    Hey Abena! I'm your brother, Akwasi! We love you too. The kind of spaghetti used is not the usual. We use the basic size spaghetti. I wished you would have liked the waakye better, its my personal favorite dish. None of our foods are for specific occasions ONLY, but its just that many events are celebrated with rice meals because they have more of a gourmet look so jollof and waakye tend to be the meal of choice.

    Waakye in Ghana is food to die for, we eat it with gari, vegetable salad and spaghetti, fried ripe plantains, eggs, kpomo, fish, and any protein of choice. You can never have enough of Waakye in Ghana. We queue to buy waakye any time of the day, especially in the mornings.

    The sauce is tomato stew and the shito is fried pepper and tomato with powdered shrimp and powdered dry fish

      They use plenty pepper for the shito make it hot, so you take just a small amount

    Waakye is absolutely delicious and a staple Ghanaian dish. It originated from Northern Ghana but enjoyed by all Ghanaians. The beans is black eyed beans and it’s cooked with a certain leaf that gives it the colour. The spaghetti just makes it a more richer or heavier meal. We often have this for breakfast lol. The spaghetti you got with you meal is not the typical spaghetti they use in Ghana. The one they use back home is quite similar to spaghettini but called Taalia. It’s my absolutely favourite Ghanaian dish lol.

    The gari wasn't fried....
    It is mixed with a little bit of the stew oil(some add a little water to the gari others do not)

    Ghana Jollof always comes with beef popularly called toloo beef and dry fish mostly herrings and it really nice.
