Making Dondurma Turkish Stretchy ice cream Part 1

- In todays video I talk about Dondurma (Traditional Turkish Ice Cream) and make it at home using traditional ingredients. It's a fair amount of work but it's the best version i've tried and i have tried MANY.
What you will need is:
600g Goats milk (2.5 cups)
200g Whipping Cream (0.8 cups)
150g Sugar (2/3 cup)
3g Mastic Gum (.5tsp)
15g (1 tbs) Salep Orchid Root Power (NOT the 'off the shelf" salep drink)
+ your flavoring of choice
You will also need a hand whisk, stand mixer and your ice cream machine and a good strong arm!
If you follow the video without deviation, you will get almost perfect homemade dondurma. It sits at room temperature for a long time without melting (I will show this in the PT2 video) as it's supposed to and can be eaten with a knife and fork (again, as it should be).

I just did some content about Turkish ice cream last week! Made some at home a few days ago using some sales I got from a Turkish shop here in Nairobi. I couldn’t get mastic so I used gum Arabic and it worked as well 😊

First time I've seen a simple non cooked version. I've failed so many times making dondurma, In the past it's been a loooong workout session of cooking and stirring, then chill then churn at high speed then beat again with wooden spoon. What i learnt from this is that you can skip the cooking part what a relief lol. Thanks for the video. I will try this soon.
People love to over complicate things as it makes them feel more important, some times the simpler things are all that’s required.
In Greece they make it with buffalo milk sometimes. Although it is extremely difficult to find real stretchy ice cream these days. Your recipe makes so match sense I cant wait to try since it is easy for me to access mastic. Salep powder not so easy because you are never sure if you got the real thing or some kind of stratch.
Yeah everybody sells crap under the “Salep” name don’t they. I’ve never seen buffalo milk, after making the video, I tried the goats milk again and it definitely has a “farmy “ taste to it I didn’t pick up first time around 😂
@@PolarIceCreamery yeah, they mention Salep in the packaging and then you read the label and it is only straches and flavorings. Some shops sell Salep and insist that it is actual Salep, however they only sell it in small bags with zero labeling. I buy it but I am not so confident in buying things without labels. However, it is not actually sketchy since in these countries, selling things from large pots and putting them in small bags without labels or anything, is a legit way of selling (a bit more traditional). Salep as a drink is amazing either plain or with steamed milk. Now about the buffalo milk, I really didn't noticed any difference in taste from cow milk. It only felt more buttery. But it is so processed that is why. When I am in my village and drink goat milk for example straight from the goat it has zero comparison to bottled goat milk. I guess all these things really make a difference and I wish there was a way to taste traditional dondurma not sold nowadays, but to travel back in the centuries :)
Real salep wholesale companies in my city, Burdur/Bucak TR. The taste is very unique and very gummy

The lack of milk powder would have been the issue, not the stabilizer. Stabilisation helps a lot with longevity and fine texture.
I’ve been meaning to do Matcha for a while since we went to Japan.
