Me too, I prefer to wash mine. I mean we all know that these things grow in the dirt. So many people get uptight about the idea of getting mushrooms wet or exposing them to water. It's not like I'm soaking them in the sink for 10 minutes. I rinse them off briefly and then dry them or cook them immediately and they're completely fine and unaffected.
@updowngroupfood "I was skeptical about the mushrooms-absorb-water idea and so did the soaking experiments with standard white mushrooms for “The Curious Cook” back in 1990. I've since tried a number of others, and if you make sure to shake the water out of the nooks, fresh mushrooms absorb little if any water. I’d also say that since they’re already around 90% water, a little more or less isn’t going to make much of a practical difference in the subsequent cooking." Harold McGee, Food Scientist
thanks for the video. I now brush them but still do a quick rinse. But you are right, I can't soak them in water, they do absorb and retains tons of water
LOL So True I've tried it like when i was 16 and i imitated the guy at the restaurant got a cut... burns as any spice or salt falls on it...... hell of an experiance
@OlympicClassDandy Mine are made in Japan from the 1970's but I'm sure you can find a similar thing in a Chinese or Japanese kitchen store. Thanks for watching and good luck finding the bamboo serving baskets.
@kiminokami Yes but this cleaver only works in 3rd edition. i have not yet tried 4th edition. On a natural 20 it goes right through the mushroom and the cutting board. Next time you go shopping make sure you cast "protection from junk food."
@i986scripto It's a made in Hong Kong Cleaver that I bought at Pacific Mall for around $20.00 Canadian. If your city has a Chinatown with a real restaurant supply store (not a kitchen store) you should be able to find something similar. Cheap, effective, and as sharp as a razor blade. Make sure you try before you buy to make sure it cuts like a razor blade. If it won't slice through paper it's not the real deal.
Veggie cleaver...where's it from (I want it)? Nice vid, glad to see someone respects the shrooms. Can't begin to tell you the places I worked at where they couldn't give a hearty shiat about properly stemming them,
@BoostersUnited Shrooooooooooooooms!!! Thanks for watching. If you think there are spiders crawling on your face don't jump out the window. Just go to your happy place. Wooo-sah!
@Youtomia What is significant depends on the person and how much they care. This is how I roll. You don't have to do the same. But if you want to see the difference cook a washed batch in one pan and a brushed batch in another. You will taste the difference. Peace! Thanks for watching and happy cooking.
@87Webbfan Not often. I use a diamond steel. Then a ceramic steel. Then a normal steel. Then I buff it with a kitchen rag. That's it. Thanks for commenting and watching. Peace!

don't care what you say i'm still going to wash them with water
sammy same here😀
sam me too. it rinses any other things besides just dirt.
Washing is bad tho. It makes mushroom grow and sweat rapidly.
