My GAWD brown eye 👁. We haves a beaver problem down here's in butternut confection capital of Tierra Del Fuego. I cooks a dish very similars to this only uses beaver 🦫 tenderloins. I tells you don't knocks it till you tries. Ppl don't realization how good gooey yum cheese sauces goes with beaver meats. What is Kari? Is that like a curry or something?
I think it's actually achuete or annatto powder made from the seeds of the achuete bush, it has a mildly sweet and nutty flavour and also like a deep red-orange food colouring. There's a Philippines dish called kare-kare that uses this powder, I think that's where they got the name from!?
