    I made this last night, Oct. 30, 2014, following your recipe and technique, with 6 or 7 wings (forgot to count). Also the dipping sauce from the fish balls, as you suggested. Wonderful! My husband and I ate the whole thing! And -- he wants me to make it again (the big recommend). I love your presentation of recipes and your genuine enthusiasm for what you're cooking. Also love Thai food and am so happy to have found your channel. I am making a number of your dishes as a result. Thank you!!!

    when i used to take the overnight State Railway of Thailand from BKK to Hat Yai on the way to Penang the first stop in the morning was in Surat Thani. The best thing about that were the women with large trays of this style of fried chicken balanced on their heads as they would walk along the parked train selling their family's version of this insanely crispy chicken.

    I had the best fried chicken from a street vendor in Bangkok last year. Ever since I've been looking for a recipe for it. I tried this recipe of Hai Yai Fried Chicken. Yes, this IT! Finally I found the taste I remember. Crispy, juicy, and flavorful with a hint of sweetness. Thank you for sharing the recipe!!

    I made this recipe last week including double fry. It is hard to believe that such a wonderful flavour is derived from just a few ingredients. Using the delectable marinade as the batter's liquid is a brilliant idea. From now on, this is my favourite fried chicken. And Pailin is right, forget about the dipping sauce, this fried chicken is extremely good on its own.

    I bought them from the road side stall, never see any shallots or sticky rice. I already soaked my brown rice, so will eat it without the sticky rice this time. Thanks for sharing your recipe Pailin, you're an angel teaching us how to cook and gave out real recipes.God Bless you.

    I've always said this is what I'd want for my last meal. Reminds me of the weekend markets with my grandma in Khao Chaison. Fried shallots and sticky rice are a must!!!

    I came across your video yesterday, and today I made two small batches of hat yai fried chicken. The second batch I made, I added more soy sauce, black pepper, sugar, and flour. It was tastier and crispier then the first one. Thanks for your fry chicken recipe! I will share it with my friends.

    I made this tonight! OMG! It has brought the fried chicken to another level! It was so delicious and chicken was so juice. I used airfryer though, it is a healthier version but the result still turned out to be excellent. Thanks very much for sharing this recipe. I have tried many of your recipes and they have never disappointed me.

    I love fried chicken and even though I'm Lao (and ate a mix of Thai/Lao food growing up), I never had Had Yai. Must experiment...

    Just a tip.
    While deep frying anything add a pinch of salt to the oil before you start frying and nothing will stick to the bottom of the pan.

      Surprised you got so many likes for such horrible advice. Salt will cause the oil to become more toxic and rancid much faster than normal. It can also help draw out water while frying which is something you don't want. Professionals either lay food down slowly into the oil, or they lift the basket up and down after loading the fryer to separate foods (or do both).

    Little detail here, when you scoop chicken out, scoop it onto rice along with splashes of those frying oil, those oil is what makes rice kind of not dry and adding flavor to the whole meal.

    My favorite dish......hands down. Gai Taught Hat Yai with Khao Neough is what I long for...... that and the beautiful sing songy southern thai language known no where else in the world.     Thanks for the right recipe. I love the Hat Yai deep fried chicken, but I never get it right. I fact I used to live in Hat Yai few years back.     Sawadee Khrup Khun Pai. I am a Falang living in Thailand for 20 years and cooks (and prepares foods like bacon, ham, etc) so your channel is of much interest to me. Your description and scientific background of the various recipes is absolutely spot-on. Brilliant. The kind of information people need. I have a request. Some years ago I went to a restaurant many times in Hua Hin. It was called 'Indochine' and harkened back to the days of the French Occupation in Vietnam, Cambodia and Laos. The surroundings were like something out of the 1920's, it was very elegant and the food was out of this world. They did a starter, which was 'stuffed chicken wings'. These were whole chicken wings with the bones taken out and stuffed with minced pork, which was spiced with coriander and other things. I think the wing that was stuffed was also marinaded in spices. The whole thing was cooked either in a hot oven or deep fried. Do you know of this dish? If you do, can you share the method with us? It is not 100% Thai but has Viet and Khmer influences.     i have been looking for this hadyai style fried chicken from my childhood memories as every time i crossed over to hadyai by bus from Malaysia. The bus will usually stop by the road side for a while n mean time there will be many street vendors bringing this fried chicken trying to sell to you while we were still in the bus.
    Chicken was so good till now i only remember Hadyai by the taste of these fried chicken.

    Sure gonna try this. I love wings for just the reason you've mentioned: the skin/meat ratio.
    A dipping sauce I like to make is light soy sauce with grated garlic, ginger and turmeric. Careful: for grating turmeric you should wear a glove!

    It's called Had Yai fried chicken but actually it can be found throughout the southern part of Thailand. I'm from Pattani, we also have this kind of fried chicken as well :)

    I grew up in the south of Thailand also and when I had this fried chicken as a kid I'd try to make it fancy by making the sticky rice into a sushi shape, tearing a piece of chicken off, putting it on the rice and topping it with the fried shallots. I'd make a dozen of these "sushi" and eat it with chopsticks. Good times.

      Hat Yai = หาดใหญ่ = a town in Songkhla, a Southern province in Thailand, famous for its fried chickens.
