Hazy Pale Ale - Rakau, Galaxy, & Sultana Hops - Brew Dudes

  • We taste a great Hazy Pale Ale with Rakau, Galaxy, and Sultana Hops.
    This beer was made for an early summer graduation party. John was looking for something refreshing, well balanced and plenty of fruity hop character.
    This beer delivered on its balanced goal. The hop character had notes of citrus and sweet fruit notes. We couldn't pick out any distinct fruit characters but it was interesting enough to keep drawing us in for more sips. One simple success in this beer was the water. Our water here is generally pretty soft with the exception of having very high sodium chloride levels. For the most part the chloride levels are just too high to overcome with additional gypsum (we'd add a lot to make it work). John cut the water by about 60% to drop the chlorides. The result was a soft water profile similar to the NEIPA chloride thing.
    Water
    9 gallons of water - half distilled / half filtered tap water with 1 gram of Gypsum and a Campden tablet
    Grains
    10 pounds (4.54 kg) of Pilsner malt
    0.75 pounds (340 g) Great Western American Pale malt
    1 pound (453 g) of Flaked Barley
    0.5 pounds (225 g) of Carafoam malt
    Hops
    1 ounce (28 g) of Southern Passion hops added for a 60 minute boil
    2 ounces (57 g) of NZ Rakau hops added for a whirlpool at 185° F (85° C) for 10 minutes
    2 ounces (57 g) of AU Galaxy hops added for a whirlpool at 185° F (85° C) for 10 minutes
    2 ounces (57 g) of Sultana hops added for a whirlpool at 185° F (85 °C) for 10 minutes
    2 ounces (57 g) of NZ Rakau hops - Dry hopped for 3 days
    2 ounces (57 g) of AU Galaxy hops - Dry hopped for 3 days
    1 ounce (28 g) of Sultana hops - Dry hopped for 3 days
    Yeast
    1 packet of Cellar Science Hazy Dry Beer Yeast
    Mashed for 60 minutes
    Boiled for 60 minutes
    Fermented for 7 days at 68° F (20° C)
    Racked to keg and carbonated
    OG - 1.052 FG. 1.010 ABV: 5.5%
    Overall a great beer.

    Great vid as always guys. Do you guys do anything special when cold crashing your beers? I’m just about to start cold crashing for the first time and looking for any hints and tips and things to avoid. I’ve got a basic fermenter so was a little worried about oxygen ingress when cold crashing. Cheers.

      Hi - for this beer, I just moved the primary fermentor into my fridge to chill for a day. I make sure my airlock isn't filled too high so there's no suck back into the beer. For me, cold crashing is quick. You don't have to worry too much about contact with air with a day in the fridge. - John
