How to Make VEGETARIAN CARBONARA Like an Italian

- Vegetarian Carbonara is the pasta dish I didn’t know I was missing. After an unprecedented number of requests, I have created the most delightful, creamy vegetarian carbonara dish and must admit, it’s sensational. With fried zucchini, pepper, and carbonara the flavor comes together beautifully. With a touch of garlic to give the dish a little kick..(*shhh* don’t tell Gordon Ramsey!) Controversial? Maybe, but I couldn’t live with the fact so many people are unable to enjoy Carbonara due to not eating meat so this is my creation and I stand by it.

its not vegetarian though. cheese and eggs are animal products just saying
Thanks dear for thinking about us👍👍👍
@@genghischuan4886 ** EDIT for correction **
You're correct, it's not vegan or vegetarian!
Vincenco is humiliating people from using garlic om carbonara. Then he uses it himself. What you gonna use next in carbonara? Bacon, peas or cream or all of them?
Just to be clear, there are pecorino varieties that are made with bacterial rennet which is vegeterian, so just buy the correct cheese and it can be vegetrian!
Thank you for letting us know 👏🏻🙏🏻
And add vegetarian eggs😄
Can you give some examples available in Australia
@@nickshoro4391 eggs are vegetarian but not vegan
But cheese its self is vegetarian but not vegan so just say that there are varietes of pecorino that are vegan

Looking forward to this one. I’m a carnivore, yet need to reduce my processed meat consumption. So new ideas are always welcome 🤗
So don't buy processed meat.... go to a butcher/meat market lol
@@ImBrockatron I go to the butchers and the markets, yet guanciale is processed, as too ham, salami and the like. I always buy high quality, organic, grass fed, free range, etc raw meats. Fresh cuts, minced, it doesn’t matter. You are what you eat, a meat free a few days a week can’t harm…
You don’t eat vegetables at all?
"I'm a carnivore", wow that's cringy.
Hope you enjoy! 😍
I just made this for lunch and it's a winner! It was delicious and I can't wait to do it again! Thanks for the recipe!!!

Already did! My wife is from italy and we are both vegetarian. Imagine how happy she was when i served this. Gamechanging is frying the zuccini instead of stir frying it. That way it doesnt get all soggy and mushy. I must admit i used parmiggiano reggiano instead of peccorino (my wife prefers it) ;)

the cheese isnt vegetarian friendly because of the rennit and try smoked tofu its so good for this dish as a ham substitute
@@TheCotzi Vegetarian pecorino is very easy to find, but thanks for the smoked tofu tip.
@@KILLAGORILLA7000 i thought it cant be vegetarian because it has to be the recipe with rennet to be authentic and no problem for the tip
@@TheCotzi The version with microbial rennet tastes just like the non-veg friendly one in my opinion. I know that's not the case with parmesan etc. It's easy to find in supermarkets in the UK, but may be harder to find in other locations

Nice, I'm cooking this tonight.
Let me know how it goes!
@@vincenzosplate I have done it twice. The first time I didn't have Pecorino so I had to use Parmigiano Reggiano. Apart from that I followed your recipe, but found it a bit bitter, probably because of the cheese.
The second time I bought good Pecorino cheese, La Molisana pasta and Vegetarian Bacon (nothing vegetarian is similar to guanciale) and did the exact recipe you did except I cooked the vegetarian bacon with butter and added the previously fried zucchini at the end. And I must say this second attempt went very well. Nothing was left at the end and everyone ate with a satisfied look. My 6yo son loved it and asked me to do it again. So I'm adding this to my regular recipes. I'll do it with fresh pasta next. So thank you for this recipe.
Tried this yesterday, just with mushrooms, because I had no zucchini. It was incredible delicious. Thank you so much, Vincenzo.
The pasta in your video looks exactly like 'Spätzle', the swabian noodles from southern Germany. 😊
Do you know Spätzle?
Appreciate the vegetarian option, looks yummy
It really is 😋 definitely a must try
I eat vegetarian , I tried this recipe and is very good. Thank you Vicenzo for the veggie version👍. Please do more 🙏.
Ciao from Canada
Wow I’m glad you enjoyed it 😍
I will be making this one for my partner, but roasting the zucchini instead of frying it 👍
Great! Let me know how it goes, I’m super curious
All reprect. You taught me how to make Carbonara. And I think I do OK because of you. You will make my vegetarian friends very happy
One question though. No pepper on the zucchini while cooking? I would think the goal is to make it as similar to guanciale as you can. So early spicing seems like a must.
Please don't make this for your vegetarian friends. The recipe is not vegetarian. PEcorino contains rennet from slaughtered animals and is therefore not vegetarian.
Thank you a lot my friend 🙏🏻 I’m sure your vegetarian friends will love this recipe!
Anyway, you don’t necessarily need to add pepper to zucchini, just because it should resemble guanciale

Thank you for this video. Can you recommend a replacement for eggs please? Where I am from, in India, vegetarians do not consume eggs but consume dairy. We also have the largest vegetarian population of any country here in India. So, your answers would help a lot of people. :)

I appreciate your suggestion for a vegan Carbonara challenge! Finding the perfect egg and cheese substitutes is indeed an exciting task. I'll definitely take up the challenge and explore the possibilities. Stay tuned for some delicious vegan recipes coming your way! 🌱🍝👨🍳
@@vincenzosplate I am looking forward to it! Myself, I grew up in North Carolina and my dad's side is Jewish. But the South is big into BBQ: and I do have to smoke my NC style pork from time to time (so no Kosher diet myself, and am all into the traditional Italian recipes). Just now getting some vegan recipes for other people, Seems vegan diets are getting more popular, so how to cook vegan like an Italian should garnish views! P.S., just saw your video of how to cook pineapple pizza like an Italian: bravo-I would have thought no Italian would have touched that. The funny thing is that it's called Hawaiian pizza, but was actually invented in Canada.
Meatless pasta is great! (Vegetarian in most cultures means no egg as well).
Thanks Vincenzo. I already made your carbonara using vegan becon.Time for zucchini one :)
Sounds great! 😍
How is egg vegetarian though?
@@huneydubs by definition, vegetarianism excludes any form of animal flesh but eggs are not flesh. So eggs are vegetarian but not vegan.
Hi Vincenzo, could I mix the zucchini stripes in flour before frying it, it would get more CRISPY, isn‘t it? Greetings from Berlin/GER
Oh yes you could try!
Oh, man! I would love to try this, but we don’t eat eggs in my family. 😭
Love all your recipes though ♥️
I'm glad you enjoy the recipes! If you're looking for egg-free alternatives, you can often find vegan versions of classic dishes. For carbonara, you might consider using a plant-based cream (like cashew or soy cream) as a substitute for the traditional egg-based sauce. While it won't be exactly the same, it can still be delicious in its own right. Remember, cooking is all about experimenting and adapting to your preferences. Happy cooking! 🍝👨🍳🌱🇮🇹
Hey! Thank you sooo much for replying - I feel like I am talking to a celebrity.. hehe.. Yes, I will consider making sauce with Soy or Cashew cream as an alternative. That's a great idea.
Grazie Vincenzo. Looks delicious. I'm a vegetarian too. Keep them coming!
Thank you, I will!
Can we substitute the zucchini for mushrooms or some other vegetable?
Yes you can but prepare yourself when flavors starts to shift because some vegetables have an overpowering taste.

Is it possible to make a vegan carbonara? Would it be a challenge for you?
For G.R. you should add green peas in the Sauce.... Hahaha!
Thank you very much, Vicenzo, for sharing your wonderful video with us.
Greetings to Suzanne, to Sebastian, to your familiies in Italy and in Australia and to you from the Swiss Kitchen Dummy.
well a vegan carbonara would be quite impossible, that's true challenging
@@vincenzosplate I'm going to horrify you with smoked tofu and creamy almond butter sauce.
Frying some smoked tofu for 5-8 mins until crispy outside, chewy inside. Add salt and garlic. Onion perhaps, I don't remember exactly.
Whisk together almond butter and water and add to it
Add nutritional yeast flakes (good one are hard to find, though, many just taste super yeasty, certainly avoid organic) to get a cheesy flavor. Might also use vegan cheese substitute, but yeast is more basic.
Mix in the pasta
Add a shit ton of pepper.
I like to add some lemon zest to that sauce before adding the pasta, but that makes you scream even more.
I don't want to call that carbonara though, but it's inspired by carbonara and the German fucked up version using creams instead of eggs (almond butter + water is a classic cream substitute, it's obviously behaving different, and you end up with a more scrambled egg reduction if that ends up drying out).
In any case make sure to use good almond butter. Unsweetened, I prefer Italian or Spanish ones, certainly do not use Californian. Californian almonds are bland garbage.
@@canisinumbra It's pretty weird but not disgusting :D
It's quite possible with egg substitute and vegan pecorino if it exists 🤔
What would you recommend if we don't eat eggs?
Don’t make carbonara 🤣
I like to roast my veggies with min oil rather than fry as healthier. A mix of roasted Mediterranean veg would make a great carbonara for meat-free day 👍
Would you do anything different if you were using mushrooms?
I would also recommend sautéing them separately and let the moisture come out first before adding in the rest of the ingredients.
@@vincenzosplate Grazie mille!
Can we use milk instead of eggs
Would I be able to fry it in extra virgin olive oil instead of sunflower oil?
Sure but have a look at the price difference of EVO to sunflower oil…
Yes of course
Can you do this with Aubergines as they are more meaty in texture?
Interesting idea, they have a stronger flavor too
You could try, it sounds interesting
waiting....
OUT NOW!!!
just to let you know that pecorino is actually not vegetarian (nor is parmigiano reggiano for that matter) because it is made with lamb rennet to curdle the casein in the milk. a good substitute for vegetarians could be something like Vegetale di Sardegna which is made from vegetable rennet. nice video though :)
Agree with vegetarian carbonara... I might use another vegetable
Yes feel free to experiment

One question, Pecorino is made using animal rennet, isn’t it?
If yes, then we would need an alternative.
You could find a good vegan cheese brand
well I made a vegetarian version, not a vegan! But there are many vegan cheese brands out there
@@vincenzosplate if it has rennet it's not vegetarian because a cow was killed to make it.

Contradiction in terms
@@vincenzosplate There are many vegetarian dairy cheeses. They are the cheeses that are NOT made with animal rennet. Vegan cheese is a different thing entirely; it's not even cheese. :) People making your dish will just need to source a hard cheese similar to pecorino romano, but not made with rennet. It will be labelled 'suitable for vegetarians'.
No eggs
No deep frying zucchini in grease sunflower oil
No pecorino in rennet
