Vegan Carbonara - ready in 15 minutes

Our vegan carbonara is a simple recipe that can be made in 15 minutes. The taste of our carbonara sauce is very close to the taste of an authentic Italian carbonara recipe. It's full of umami, peppery and with egg flavour thanks to Kala Namak, an Himalayan black salt that tastes exactly like egg.
INGREDIENTS LIST
🌱 Vegan Carbonara Sauce
200 g (0.8 cups) soy milk
100 g (3.5 oz) carrot boiled
1 tbsp soy sauce
1 tbsp nutritional yeast
½ tsp paprika
1 small piece of onion
1 small piece of garlic
1 tsp corn starch
½ tsp sea salt
⅓ tsp kala namak
Other ingredients
300 g (10.6 oz) spaghetti bronze cut
120 g (4.2 oz) smoked tofu in small dice
2 tbsp olive oil
1½ tbsp coarse sea salt to salt the water
½ tsp black pepper
INSTRUCTIONS
- Chop the carrots and cook them in boiling water until soft.
Then start cooking the pasta in salted boiling water.
Blend all the ingredients for the vegan carbonara sauce together (including the boiled carrots). Set aside.
- Chop the smoked tofu into small dice. Then fry it on a pan with 2 tbsp of olive oil, a pinch of salt, and black pepper until its nice and crispy.
- Now add the sauce to the pan with the tofu, add 1 ladle of pasta cooking water, and warm it up for a minute or two until it simmers gently and it starts to thicken.
- Drain the spaghetti al dente and add them into the pan with the tofu and the sauce. Save some pasta cooking water.
- Add some more pasta water if necessary, sprinkle with a generous amount of freshly ground black pepper, and toss them gently until they are fully coated with sauce. Serve and enjoy!
STORAGE
This vegan carbonara is best eaten straight off the pan. However, if you have any leftover, store it in an airtight container in the refrigerator for up to 24 hours. Then heat it up on a pan with a dash of water.
This recipe is 100% plant-based (vegan), and so without milk, without butter, without cheese, without eggs, and without any animal-based products.

I smoked and marinated my own tofu with wood chips. Then, I added some of the marinate "juice" to the pasta sauce to increase the smokiness ^^

So happy I found this. The vegan carbonara I made till now was so much work that I only made it twice in 5 years and we used to make it once a week when we had chickens and still ate eggs, ham AND the poor chickens, oh horror. This one looks so promising I will make it as soon as my carrots are big enough and I figure out how to smoke my tofu. I am sure someone will show how somewhere. Thanks so much for the great recipes and videos, my whole family subscribed!
I did it! Your recipe is very good, but the smoked tofu I ordered online was awful. Today it was better with home-smoked tofu. If, like me, you do not have a smoker, best put a burner outside or near an open window, layer a pot you do not like much -it will get ugly- with thick (or 2 layers) aluminum foil. Mix 2tbs sugar, 2 tbs flour, 2 tbs black tea on the foil, place a steamer rack over (NOT PLASTIC) and put 1 block of firm tofu, pressed, frozen, defrosted and pressed again to get as much liquid out as possible, on the rack. Cover with lid and put on high until you see smoke coming out. Turn heat to low, leave 5 minutes, and uncover to turn the tofu. Put on high again till you see smoke and turn off and leave 5 min. or to cool or until you think the smoking is done. It is very good in this recipe and has a bacon-like texture even!

I actually tasted a small pinch of that salt, pure, in a friend's house and it wasn't a pleasant experience at all, the egg taste is very strong and lingered in my mouth, kept me wondering what on earth could be done with it. What an interesting take on the dish. I have always wondered how I was going to make carbonara for my vegan friends because it's such a good food. Some of them went vegan and they never tried carbonara in their lives before doing so, and I had no idea of how would I make them try the dish without the traditional ingredients. I made, however, a vegetarian version where I replaced the bacon with broccoli, slightly caramelized onions and garlic. It turned out fantastic.
Someday I'll try this version myself and serve to some of my vegan friends. Tofu is a little hard to come by around where I live, so I'll provably stick to the broccoli or maybe a zucchini, which also makes for a great carbonara. Great video! The only thing I'd do different would be putting all the black pepper to cook with the sauce instead of frying it with the tofu, as to prevent the pepper from burning. But that's just a personal preference.
