Crispy Tempura Zucchini / Courgette

4½ oz Flour
4½ oz Cornstarch
10 fluid oz Very cold soda water
pinch of salt
¼ inch slices Zucchini/Courgette
There's enough batter to coat about 2lbs of Zucchini/Courgette
Vegetable/Sunflower Oil
200/220c - 390/430f
Wok or Deep Pot for frying

I will be making these over this weekend while I a visiting with my son and daughter-in-law. I may even do up some tempura shrimp along w/the zucchini. Never tried carbonated water, the outcome looks delicious!

Dip is 75% Mayo- 15% Ketchup- 10% Louisiana Hot Sauce with chopped dill pickle and a few chives
