With any Wellington regardless of the meat used. Try a splash of wine and and a boast of flavor a splash of the same kind of stock as the meat to the mushrooms. Do this towards the end of the cooking. Then finish the cook down.
I hate mustard in all forms, but this looked spectacular and this has been on my mind fir a looong time now. Will try it out. 👌

What jelly or sauce did you use?
Don't use this mustard!! I love American mustard and thought this can't be that bad. Ruined our new years meal last year haha
Apart from that, this recipe is great and so easy to make!!
You should use dijon mustard, as used in beef wellington, as it goes perfect with the mushrooms. Mustard should also be painted round the meet just after it goes out of the pan.
Is the white wine optional or is it needed?
For the love of god, don‘t serve it immediately. Wait at least 5-10 minutes after taking it out of the oven before you cut it.

I wanna say you don’t have to follow beef Wellington recipe, for example you could rub some paprika and chill on meat instead of using mustard,
would have been easer to make if I would have had written directions instead of trying to see on my phone. Tasted okay.
