Gluten free puff pastry

  • Puff pastry almost equal to wheat pastry but gluten free? Yes, it's possible. This recipe is really easy, it takes time, but it is not difficult and the result is well laminated and beautiful pastry!
    Ingredients:
    100 grams (0.5 cup + 1/3) of tapioca starch
    50 grams (0.5 cup - 1 tablespoon) of potato starch or cornstarch
    90 grams (0.5 cup) of rice flour
    10 grams (1 tablespoon) of chickpea flour or other legume flour
    * if you don't have legume flour, use 100 g of rice flour
    1.5 teaspoon xanthan gum or 3 teaspoon psyllium husk
    0.5 teaspoon of salt
    * optionally 0.5 teaspoon of baking powder
    210 grams of ice cold butter
    120 ml of ice water
