Rosemary Garlic Butter:
2 tbsp butter for cooking garlic and shallots
5-7 cloves minced garlic
3/4 cup minced shallots
2 sticks of unsalted butter sitting at room temp
1 1/2 tbsp chopped rosemary
1 tbsp finely chopped parsley
1 tbsp lemon juice
1 lemon zested
1 tsp sea salt or kosher salt
Bearnaise sauce:
1/2 cup dry white wine
1/4 cup white wine vinegar
5 sprigs tarragon
1 medium shallot
10 whole peppercorns
Squeeze of lemon (1 or 2 tsp)
4 egg yolks
8 oz unsalted butter
1/2 tsp kosher salt

I was expecting the robot to cook but you did 90% of the work.
Thats what cooking is though, mostly prep works and the actual cooking part is the easy part...the machine comes in handy because you never have to worry about burning anything
You’re videos feel longer than they actually are. I mean that in a good way. You fit 30 minutes worth of “Culinary Kung Fu” in a 12 minute video without making it feel overly/annoyingly sped up. I’m not only a subscriber, I’m also a fan. 🥘♥️

Béarnaise is incredible. It’s so RIDICULOUSLY rich but you can NEVER have enough. That technique for thickening it after getting the initial emulsion is invaluable - always been 50/50 if mine goes lumpy or not so thanks for that
Or you can clarify your butter in the microwave (really easy, 30 secs full power, then 10 second increments and pour off, leaving the milk solids behind), start the sauce as demonstrated with just 3 egg yokes and thicken it, again, in the microwave (10 second increments on half power) until it just starts to split, then save it with the 4th egg yolk and another 10-15 seconds on half power (medium or large egg).
Sounds scary/dangerous but it works every time: hollandaise/béarnaise, no skill or fancy equipment required. Hollandaise uses a 2-3 teaspoons each of water and white wine instead of the reduced sjalot/ tarragon "citrique" in this video BTW.
@@JVerschueren that sounds serious. Here in the UK we get French butter and Indian ghee off the shelf so the mysticism around these rituals looses some value. I love Sonny for his character work but lmao there’s no way a European would want or afford to just chuck so much prime animal product at a feel good weeknight meal lol

I've also tried it and it works great. However, you can put the hot butter in a little faster as long as you keep whisking. A swedish cooking teacher had a video where he actually put in almost ALL of the butter at once. But he probably had all the temperatures and measurements figured out because of practice.
My favorite compound butter is finely diced shallots cooked in red wine until the wine goes almost dry; DON'T BURN IT. The residual pan heat will complete the drying process. Mix with butter as you show in your video. I use parchment paper rather than cling film. This stuff freezes perfectly for a long time.
I made this last night (using a sous vide) and that Bearnaise sauce was absolutely delicious, My guests couldn't stop talking about how good the meal was. Thank you for sharing.

Alex a french cook youtuber found out that Hollandaise Sauce is actually a daughter sauce to Mayonnaise which is the real 5th mother sauce. I'd reccomend checking out his video on it!

I have one. It does have a little more than your standard air fryier but you're not far off. The steam function really helps in the process to get a sous-vide like cook. The auto settings in Chef mode are great for a set and forget with the probe for those times you don't want to baby sit your cook and not worry about it over-cooking.

Not stoked with only being able to cook one thing at a time using a machine like this. I don't expect you're going to be making a full meal only using this, and I don't expect people are going to spend $350+ multiple times to have more than one on hand. Mainly seems like a glorified air fryer.

Honestly, $350 ($300 from the special) for a very high-end air fryer and dehydrator is a respectable price. I legit was expecting 1K+ for a product like this.

One of the tastiest sauces uv had with a steak is cafe de Paris its amazing it is also done as a butter
I'm pretty happy with my Dreo, the Chef mode really works well with one exception, the browning always needs a bit of help with a torch afterwards to get it as seared as I like it. But the meat cooks perfectly, I've made chicken, crispy chicken wings, steak, pork and salmon in it. I do have other sous vide equipment and usually sear in a hot cast iron pan sometimes torching at the same time, but I like a good crust. Regular Sous Vide takes a bit more time and planning, I'll still use it but the Dreo won't be hiding in my pantry very often.
I always considered getting an air frier but am not a fan of bulky one trick ponies, this machine does a lot more, so was worth it to me. Just made chuck round steaks last night that came out fantastic, super tender and juicy. Also made vegetables that came out great, the machine has been on my counter since I got it several weeks ago.
I never made filet mignon, I prefer more fat in my beef, but this recipe looks great, I'm gonna have to give it a try!
Same here. I use my Dreo almost every day now and my only complaint is it doesn't cook my chicken breasts well.
Can you bread the wings with the Dreo and it’ll come out looking close to deep fried chicken wings?
I did not bread them, just had spices and salt on them. I think you can airfry breaded ones with a spray of oil, but have not tried that. I prefer crunchy skin. But I'm sure there are vids on YT, since any air fryer can probably do that.

yeah, it's basically a smart air fryer, but with additional cooking methods and a few cool features like the integrated probe thermometer or the water reservoir to create steam. If it has a good build quality and works as advertised, it's not that bad of a deal at $300, considering that premium air fryers can cost $200.
Yeah pretty much but no preheating, can cook easy meals for you and you can basically walk away
