Ingredients 🍋
Lemon Brownies
- 125g granulated sugar( ½ cup) (4.4 oz)
- 5g lemon zest (1 lemon) (0.2 oz)
- 85g butter (melted) (6 tbsp) (3 oz)
- 1 egg
- 1 egg yolk
- 5g vanilla extract (½ tsp) (0.2 oz)
- 20g lemon juice (2 tbsp) (0.7 oz)
- 75g all-purpose flour (¾ cup) (2.6 oz)
- 1g salt ( ¼ tsp) (0.05 oz)
Frosting
- 60g powdered sugar ( ½ cup) (2.1 oz)
- 20g cream cheese (softened) (2 tbsp) (0.7 oz)
- 5g lemon juice (1 tsp) (0.2 oz)
Bake 170°C (340°F) for 40-50 mins
Mold size: 5.9inch x 5.9inch (15cm x 15cm)

Instructions👩🍳
- Preheat your oven to 170°C (340°F). Grease or line a baking dish with parchment paper.
- In a mixing bowl, combine the granulated sugar and lemon zest. Rub the zest into the sugar with your fingers to release the oils and flavor.
- Add the melted butter to the sugar-zest mixture and stir until well combined.
- Beat in the egg, egg yolk, vanilla extract, and lemon juice until smooth.
- Add the flour and salt to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking dish and spread it evenly with a spatula.
- Bake in the preheated oven for 20 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with moist crumbs.
- Once the brownies are done baking, remove them from the oven and let them cool in the pan for 10-15 minutes.
- While the brownies are cooling, prepare the cream cheese glaze. In a small bowl, mix together the powdered sugar, softened cream cheese, and lemon juice until smooth.
- Spread the cream cheese glaze over the warm brownies, using a spatula to create an even layer.
- Allow the brownies to cool completely in the pan before slicing and serving.

Hi, I believe it's my 4th time, and this time it looked like yours, the dough, it came the size and the shape, but it remained flat. I don't mind much, I just don't understand. Anyway, it became my favourite cake recipe so I do it often, I can never have enough of it! Thank you!

Hi, you did not mention baking powder/ bicarbonate so I did not put any, it became thin, but it's good. Or your flour is self-raising? I do not like those. Anyway, I shall keep your recipe, I changed the glazing but other than that I just put less sugar, which is normal in my case.
There is no baking powder in the recipe. The flour is also all-purpose flour, there is nothing extra in it. The recipe itself rises with the effect of eggs 😊
@@propercooking Well, mine didn't. It is delicious but very thin and not at all fluffy as yours in the video.I thought that the all purpose must have self-raising agent in it, too.
@@42kellysI tend to agree with you when I first saw them I thought they must have baking powder or used SR flour because I’ve made this recipe also and mine were flat I didn’t like the recipe there are others on YT that rise better
@@cloudydaez it's rising a bit with baking powder and it is enough for me, but this is by far my favourite lemon cake! I tried the other weak a good looking lemon-yoghurt cake and l didn't like it half as much. I love this recipe and its result, so l am going to stick with it. Man, it's the third, yes, 3rd time l have made it in a short while and l can never make it better than this latest version, which blew me away! I modified the cream on the top though and cut down on the sugar greatly. It came out a bit flat but not that kind of flat l had without baking powder and it is more gorgeous than ever before! It's ranking as my favourite, number 1, coming ahead of the chocolate cake, which is crazy for l am nuts for dark chocolate and any cake with chocolate!
