How to Make Teriyaki Beef Jerky

Teriyaki Beef Jerky is a staple snack in our pantry. Tender beef strips marinated in a sweet and tangy homemade teriyaki sauce.

Ingredients
1 2-3 pound eye of round roast sliced thin against the grain
Teriyaki Marinade
1 cup soy sauce
1/2 cup dark brown sugar
1/4 cup rice vinegar
1 inch knob fresh ginger sliced
4 cloves garlic sliced
1 Tablespoon sesame oil
1 Tablespoon sesame seeds
1 teaspoon black pepper
Instructions
Transfer the sliced beef to a gallon sized zip top bag and pour in the ingredients for the marinade. Massage the marinade into the meat and refrigerate for at least 8-12 hours, or up to 24 hours.
Preheat your smoker or oven to approximately 170 degrees F.
Remove the meat from the marinade and dry each strip thoroughly by laying on paper towels. Transfer the strips to the grill grate, jerky rack, or cooling rack and smoke/cook for 2-3 hours (depending on the thickness of your slices, some thicker pieces can take 4-5 hours). Check often after the first hour to be sure your jerky is drying evenly. You may need to move pieces around on the grates if some are dying faster than others. You are looking for jerky that is firm and still slightly pliable, but not soft and squishy. If you bend your jerky and it breaks, you've cooked it a little too long.
Place the finished jerky in a gallon zip top bag while it is still warm. Don't seal closed all the way. The jerky will steam in the bag slightly and this step will make the jerky moist. The jerky will last 2 weeks in the fridge.
**Recipe note! The video says 1 teaspoon of curing salts. 1 teaspoon will cure 5 pounds of meat. For a 2-3 pound roast, the correct amount is 1/2 teaspoon. Use 1 teaspoon if you double the recipe.

When I make beef jerky it lasts a day and a half if I'm lucky. No need to extend the shelf life.
i used this recipe but on a cheap silverside cut of beef, i thinly sliced the beef and then left it in the cure overnight, cooked it and omg it tastes beyond amazing, thankyou for the recipe

Made this jerky last weekend and it was enjoyed by several bartenders and servers at my local bar. I did add 1/2 cup of pineapple juice and a teaspoon of red pepper flakes.
This is the best jerky I have ever eaten! I ate my first batch in about 3 days! Making my second batch today! 8 lbs of thins sliced bottom roast. Just finished first batch in my camp chef smoker grill! Oh man!!!

You need to put it into a glass jar. The Ziplock bags make it sweat and ruin faster. Glass jars let I it keep longer. Great video!!

Finally, I think I found a Teriyaki recipe that seems to be just about exactly what I was looking for! For the last couple weeks I've been building a jerky recipe with various stages of fail and success (kind of a sesame garlic, is it cheating if one of the ingredients is a premade sauce?) One was, basically tasteless, another had way too much pepper, one was really good but I didn't really keep good track of ingredient amounts... but last night I finally got it down. I've been wanting to do a Teriyaki recipe for some time now and yours hits what in my mind are all the correct flavor profiles. Thanks for sharing, can't wait to try it!

I watched this video with my children yesterday afternoon. We printed out this recipe, and then we went to the store last night and bought all the ingredients. We asked the butcher at our local grocery store to slice it for us.
We came home and marinated the meat in a ziplock back for 30-40 minutes in the fridge. (My children wanted it to eat before school in the morning!!:)
We didn't have paper towels so we didn't drain the meat. My children helped and were very messy and after the three pounds of meat was placed on the Nesco Gardenmaster, I had to go and use a disinfectant wipe around the outside of it! Haha... very messy!
BUT... here's the best part... this recipe is AmAziNg. We made two different recipe bags. One of another youtube video. In one bag we put soy sauce (or shoyu as we called it in Hawaii:), Sweet Baby Rays original, and a dash or two of hickory smoke. In the other bag, we did yours (we didn't use curing salt, but did use a little regular white sea salt).
The Results:
The other one was okay (Next time, if I ever try that easier one again maybe I should add more barbeque sauce or add pepper, I don't know).
But YOURS was SO FLAVORFUL! My 9-year-old said we needed to make it every day! :)))

Awesome jerky .. I love the Dr.Pepper Jalapeno recipe as well. its my kids favorite
I make jerky on the side for extra money and everyone who buys always gets the Dr Pepper & Jalapeno. They absolutely love the taste of it. I strain the Jalapenos from the marinade once the meat has marinaded for 24hrs and then add the Jalapenos to the top of the Jerky Slices before adding the meat to the Dehydrator. It gives that extra flavor and heat if you love a little bit of more heat to your jerky. It's definitely one of my favorite Jerky recipes.

Hey tried this jerky recipe and I’m addicted!! This last batch I made was great but it started to get moisture in the bag after 2 days. Should I be worried about it mould? Could I throw it on the smoker for a bit to dry it out a bit more?

So I know this video is two years old, but I just made this jerky and it is amazing. Only thing is that it is a little chewy. Anything I can do to correct this? Thanks for sharing an awesome jerky recipe.

Pro tip: sprinkle the sesame seeds on after its marinated and sitting on the dehydrating racks.
I've made Beef Jerky, Deer Jerky time and time again. Tried drying the
jerky in the oven one time and then I've used the Dehydrator. I honestly
think the Dehydrator cooks and taste much better than the jerky in the
oven. I've only used Eye of Round for my meats. I've used 4 eye of round
each time I make the jerky. If I was to compare the little bags in the
store with a little bag of homemade jerky. Store bought jerky cost about
$13.00 for store bought stuff, but the homemade jerky taste much better
and for comparison the homemade jerky should cost about $35.00 for the
little bags like the little bags that of the jerky in the store. Yes,
it's that much more better tasting. Albeit I soak the meats in a bowl of
Worcestershire and Teriyaki for overnight to really get that flavor in
the meats. And On the dehydrator it takes 4 hours until the right
consistency. It takes me 2 days to do jerky and to clean up the slicer
and dehydrators. PS. save you of the time cutting with a knife. Just use a Slicer.

Its legal in US to add Nitrites and Nitrates to the food in that quantities ? In EU the limit for 1 kg is 0.5 mg/Kg and one tablespoon is 100x that ?
What type of smoker did you use? was it digital electric?? wood chips right?
I used a Camp Chef pellet smoker.

This is a Simple, tasty recipe! It's good your recommending using pink instacure #1 powder for safety.. Made pink so it won't get confused with plain Salt. Plz, Don't anyone confuse with Himalayan Pink Salt.
