I am wondering. If I am defending. Should I countercharge? Or should I let charge enemie swords into my spears?

It depends on whether they have a formation or not. If they do they should just stand still and use it. If not the spears will deal the most damage by charging (Although spears without formation prefer fighting cavalry over swords)

A wing is a term I typically use for units who have a supporting role for the center and is placed right next to it.
A flank is basically just the edge or a way to recognize a certain direction.
That is the best I can do with my limited english :D

Where a wing acts like a mobile section of the army for flexible defense
Or could be the hammer to your anvil

a wing is basically another mini formation or mini army designed to protect the flank, it would often have it's own commander and command structure to achieve it's own goal
the flank is just the edge of your formation
so a wing can be protecting your flank, or make it longer , thus becoming the flank itself

"defense in depth" is a military term. i do not think he is claiming the guide itself is in depth.
