So true, I found this channel on random CZcams shorts and started following it.
This is a well balanced channel. They are not like a boring cooking channel with loads of unwanted stuffs. I usually don't watch lengthy cooking vidoes coz they talk bluff. And this channel's lengthy videos are not boring, they project a different vibes and definitely not missing the essential of cooking and techniques. Way to go.

Even as a non-Indian who cooks a lot of Indian food. There's not much magic to it at all if we know the basic techniques, and understand the principles of using spices. If tomatoes are out of season, it's better to use good quality canned Italian tomatoes with nothing but tomatoes in them. Because these tomatoes are picked when they are riped and canned. Out of season fresh tomatoes is bad for any makhani. And yes, I have seen lots of Indian restaurants use good-quality canned tomatoes in their makhani gravy.
You're right, it depends on seasonality and availability of ingredients.
For the common public in India, finding canned tomatoes might be a larger task than finding ripe tomato varieties in the vegetable market which might be the opposite outside the country.

Quality canned tomatoes are better for natural color and taste. In fact, he said that for the rich tomato dishes they used quality canned. for other dishes that required a "fresher" taste, they use fresh tomatoes. For example, in dishes that use makhani base the star of the dish is tomatoes.
