Linzer Cookies

Recipe:
Makes about 18 - 20 sandwich cookies
1 cup (96g) almond flour
2 cups (240g) all-purpose flour
1/4 teaspoon (1g) of fine salt
1 cup /2 sticks (227g) unsalted butter, softened
2/3 cup (134g) granulated sugar
1 teaspoon (5g) pure vanilla extract
2 large egg yolks, at room temperature
1/2 teaspoon (2g) pure lemon extract (or zest of one lemon)
Icing sugar for dusting
Strawberry and apricot jams (or your favourite preserves)
