DELICIOUS GARI FORTOR / GARI JOLLOF DELICIOUSLY HEALTHY

Ingredients:
Chicken Thighs

1 - Green Marinade

1 Large - Chopped Onion
1 - Habanero Pepper
3tbsp - Tomato Paste
3cups - Tomato Sauce
Chicken Stock
Shrimps - Optional
1cup - Gari
Extra Vegetables Optional
Carrots

I remember my mom preparing this some twenty or more years ago! She called it jollof garri... I'm not sure she knows there's a Ghanaian recipe like this, she was just being creative!

When we lived in Ghana when I was a kid, my mum could NEVER get Fufu or Jollof Rice right... so our neighbours taught her to make Gari Jollof and it became a staple meal.
