Nailed It! Cream Soda Recipe Version #2

  • Ingredients:
    2L water
    650g sugar
    100g lactose
    5g cacao nibs
    1g (¼ tsp) citric acid
    Pinch of salt
    100 mL pure vanilla extract
    Method:
    Heat the water until almost boiling.
    In a large jug; mix sugar, lactose, cacao, citric acid, and salt.
    Stir the hot water into the sugar mixture, until sugar dissolves.
    Cover and set aside to cool.
    Once cool, strain out the cacao and mix in the vanilla.
    A good starting place seems to be 1 part syrup mixed with 2 parts soda water.

    What I mostly like with this channel is the personality that Glen brings. It feels as though you're a guest in his kitchen, and him being a food excentric he's very eager to talk to you about food, in a way that's not annoying or pretentious. I can't really say what makes it so great with only a few words. He just seems genuinely inspired and passionate. He doesn't claim to be an expert, he critiques his own food creations each time. He's humanly imperfect and it's just plesant to watch. My favorite is at the end of each video where he does the final taste, you can really see the passion in his eyes as he goes for the last judgement, his concentration when he's analyzing the flavour according to his expectations. The show feels very organic, please never commercialize it, keep doing you Glen.

      @@GlenAndFriendsCooking I don't expect you to get this, but in order to make your coke recipe better. Use cinnamon, lemon juice (zest and peel included, strain to make sure no zest is in the final product.) Also use the zest of a lime and orange. Taste test and smell your coke and you'll see what I mean!

      Have you tried a keto diet? Basically you totally cut sugar and carbs, and that trains your body to use fat as an energy source. It turns the fat into ketones and you use that for metabolism instead of glucose.

      Why? It’s sugar water, salt, gross flavouring and caffeine source + gimmicky ingredients that don’t really seem to do anything like taurine.
      In order for an energy drink to actually work; beyond just the effects of caffeine; you’d have to be depleting your carbs rapidly doing some kind of exercise.

      My son used to love a red creme sold in Texas under the name Red Rattler. I always thought the red cremes had a "bubble gum" leaning flavor as opposed to the pure vanilla of an amber-colored creme soda.

    I'm from Quebec and my girlfriend is from Ontario. Imagine my surprise when I first visited her and I cracked open a crush can and out came PINK cream soda. I was sure they made a mistake and accidently put strawberry soda in there but my gf thought I was insane. An argument then ensued over the colour of crush cream soda. Years later we still argue about the REAL colour. She says pink, I say clear!
    After doing some research I read that Crush marketed it that way in Ontario (and later on in western Canada) because they added grenadine to appeal to that market. I always thought they tasted exactly the same but I would have to do a side by side taste comparison

    I like to make my cream soda with a wee bit of almond extract for an amaretto flavored cream soda.
    My wife loves those orange cream push-up ice cream pops and a splash of orange extract in the cream soda, works great to match the ice cream pops.
    A sweetened Vanilla & Orange extract syrup mixed with Chilled Kefir or when making frozen yogurt is like the push-pops with a hint of lactic acid zip.

    I used cocoa nibs in the boil one time while brewing a Belgian-style Tripel. Clogged the spigot and was a huge headache but wound up tasting a lot like cream soda.

    We have the red cream soda in St Louis,Missouri as well. I believe the red color originally came from the addition of grenadine syrup.

      @@proeuropa1783 We have a lot of traditional food such as the maltese pastizzi (ricotta pastry) and the maltese bread. (tuna, calipers, bit of sun dried tomatoes) We love our food to be honest.. we have a lot of traditional sweets and pastries too.. tbh the list is so loooong. My favourite would be the maltese rabbit which can be cooked by itself in garlic or can be turned into a stew.

    OF COURSE I MADE THIS!
    It came out great but to me is was missing a flavor note. My paramour likes cream soda a little sweeter too. I added 20g brown sugar at the end and that added a caramel flavor along with a little more sweetness. That was perfect for our tastes.The ONLY downside is that I have had more soda in one evening than I usually drink in a month - ha ha!
    For the record; it comes out a lot lighter in color when you use a good Madagascar vanilla.

    Thanks Glen! Definitely going to try this recipe. So interesting about the red cream soda. Growing up in South Africa I only knew it as green. Only later did we get other brands producing clear, more 'old fashioned' tasting cream soda.

    I live in CT in the US and Cream soda is always caramel colored. We used to have Pop Shoppe here and they used the same color. I'd guess it is regional and they match to the region where they are selling.

    At first I thought the citric acid was salt, then got disappointed it wasn’t because salt seems like the obvious choice to enhance those flavors. Then you grabbed the actual salt and I got excited again. Lol

    Replace the cocoa nibs with rosewater and use pure vanillin rather than extract with a dash of green food colouring for the Pakistani/ South African version of Cream Soda. Why do SA and Pakistan both have green rosewater cream soda? Who knows? Just enjoy it.

      This was going to be my suggestion. A standard simple syrup is equal parts water to sugar, and I've done what I call "super simple syrup" with 1 part water to 1.5 parts sugar, though that definitely requires heating the whole mixture on the stove to convince the sugar to absorb at that concentration.

    Finally! The 2nd version of the Cream Soda experiment. I made it according to your recipe and it was the best cream soda I ever had!!!
    Also, I made a 2nd batch and this time I added a bit of almond extract and it made the taste of the cream Soda taste as it came from God himself!!!

      True. I thought they were talking about the Crush brand that actually is electric pink. I think the pink versions have a hint of raspberry or strawberry flavor in them, very very little it's hard to notice but i could be wrong.

      Google "Crush Cream Soda". For a long time it was probably the most common brand of the stuff in Canada.
      The colour always put me off a bit, to be honest.

    Growing up in Mississauga n the 80's I drank pop shop cream soda, grape and root beer all the time we would order the case and they use to deliver to our house.

    It's really cool seeing different versions of soft drinks from other countries. Over here in Australia, as far as I know, all cream soda is raspberry flavoured.

    We had a POP SHOPPE in our town, USA State of Iowa. In I’m going to say the mid 80’s they had dozens and dozens of flavors....seeing that bottle brought back some great memories !

    After learning to make lactose ginger beer, I made a lactose beer with dandelion root and it's flavour and taste reminded me of cream soda.

    As a kid I know we had clear sometimes, but I had kind of forgotten about it in favour of pink (more bubblegum pink than red like the stuff you had there). I was so surprised when I moved to Quebec to see clear Cream Soda everywhere! It unlocked those deep memories

    Love cream soda. I grew up drinking "Red cream soda" which also has a small hint of lemon and orange oils in it. Gives it a bubble gum/cotton candy smell and a really cool taste. Nice video

    Man, this show is just interesting to watch as an Ontarioan. Every other show I watch is made in the US so I never expect any objects or ingredients or brands that's I recognize (other than obvious ones like subway or mcdonalds of course). But this always has all sorts of things I've eaten/drank, seen, or heard about here, it's actually quite comforting and feels like I'm actually there. I guess since the vast majority of content is either US made or Canadian, but targets Americans (by using imperial or USD) so I never expect it. Love this show!

    Amazing. I doubled the ingredients and left the amount of water the same so it would just be more concentrated. I’m drinking it now and it’s amazing. It’s really difficult to get cream soda in the U.K. with sugar in. This is better than I can buy
