A 1938 Classic! Chocolate Velvet Cream Recipe
Decadent Chocolate Velvet Cream: A 1938 Classic! The Old Cookbook Show
Welcome back, friends! Today on Sunday Morning and The Old Cookbook Show, we're diving into a vintage recipe from the 1938 pamphlet "My Party Book of Tested Chocolate Recipes" by Baker’s Chocolate Company. Join us as we create the Chocolate Velvet Cream, a delightful dessert that’s rich, creamy, and sure to impress. It's a cross between a chocolate mousse and a chocolate pudding recipe. We'll also discuss what is a square of chocolate?
This recipe takes us back to the Great Depression era with simple yet luxurious ingredients. We’ll navigate through the steps of melting chocolate, working with gelatin, and whipping up a velvety cream dessert. Perfect for dinner parties or just a sweet treat at home!
Chocolate Velvet Cream
Ingredients:
1 square Baker's Unsweetened Chocolate
1 cup milk
1 Tablespoon granulated gelatin
½ cup sugar
1/8 teaspoon salt
1 cup heavy cream
½ teaspoon vanilla
Method:
Add chocolate to ¾ cup milk and beat in a double boiler. Soak gelatin in remaining ¼ cup milk 5 minutes. When chocolate is melted, beat with a rotary egg beater until blended. Add gelatine, sugar, and salt, and stir until gelatin is dissolved. Cool. Add cream and vanilla. Chill until cold and syrupy. Place in bowl of cracked ice or ice water and whip with rotary egg beater until fluffy and thick like whipped cream. Turn into individual molds. Chill until firm. Unmold. Garnish with cream. Serves 6.

    Ahh, a classic. More a home kitchen friendly bavarian/bavarois rather than a panna cotta, but the principle is the same. Only real difference is the aeration via whip. If you wanted, spending a little time to infuse the milk and/or cream with other flavors would do well. Perhaps ginger. Or if you're feeling adventurous, chipotle.

    I noticed you listed all the ingredients for this recipe in "mL" as well as cup/tsp/Tbsp. I'm completely confused because I thought "mL" was used only to measure liquids and grams for solids/dry. Is this practice something common to Canada?

      Yes in Canada we measure by volume for cooking - mL isn't really 'only for liquids' it's just liquid is the most common use for mL.

    Viewers might also like to know, before baking chocolate there was TaDA 🎉 cocoa powder and butter! Since we re not selling the baking choc bars, we can be realistic and just use basic items. 1oz unsweetened chocolate = 3tbsp cocoa powder 1tbsp butter Melt all with the milk in the Chocolate Cream recipe and go from there

    Glen as im Australian i had to rethink and rethink 24 hours on this variant and it picked my brain and it kinda reminded me of a chocolate Vanilla slice texture and consistency i wouldn’t go french vanilla cream cause its more puffy and way we call vanilla slices here in Australia Snot blocks.

    I make great scrambled eggs, not over cooked. Beat 2 eggs w/ about a T. of water. Melt butter in frying pan on medium-low heat. add eggs and gentle move them a bit allow the cook egg to gather and the uncooked egg to run into the pan. Remove pan from heat when the eggs are solid and still light yellow and fold softly.

    Gave these a try today. I think they will be good with tea. Would prefer a stronger molasses flavor and oddly enough I feel like a pinch of salt isn't quite enough. But still good and not too sweet. Fly safely and God go with you, Glen and Jules!

    Gave this a try. It was tasty but imho needed salt at the end. U do need to simmer the round steak bits as it's a bit tough otherwise. The pasta survived the 25 minutes just fine. Did not need to precook the mushrooms. I like oregano so I would add it. Overall i found this dish to be hearty and filling which was probably the whole point.

    Hello Glen I tried this recipe and it is wonderful. My family and friends enjoy it very much however my niece and I did feel the effects of the lactose. I made a batch without the lactose and your rite its just not as good but still good, can you suggest a substitute for the lactose to get that mouth feel? Thanks so much for your videos you improve the quality of our lives by letting us trust what is going into our food. I have not drank soda pop for years because of all of the additives these days. Thanks again.

    Have you ever thought of publishing a cookbook of the recipes you make on the old cookbook show? Just a reprint of the recipe itself with your own notes added to it about measurements and substitutions for ingredients you can't get anymore, and your opinion of the finished product.     Hi Glen, My Knox memories go back to the mid 1960s. (NJ TN TX) I've always seen it KNOX (I don't remember ever seeing an E at the end) We have Knox gelatin in Mexico as well, also no E. Jim Mexico retired
