That's the worst karjalanpiirakka I've ever seen! :D The crust isn't supposed to be tough, it's basically a savoury rice pudding encased in a rye flour crust, and you can spread it with egg butter (kind of like egg mayo but replace mayo with butter). Delicious.
So sad that they picked the dodgiest looking Finnish foods in existence but it did bring up the entertainment value hahah

Egg mayo is exactly what it sounds like, boiled eggs mashed into small pieces mixed with mayonnaise. I used it as a reference since it's a staple sandwich filling in the UK and, I assume, probably Ireland as well

Vaihe 2: Kiehauta vesi poreilevaksi. Lisää vesi, mämmimaltaat ja ruisjauhot seoksen joukkoon. Imellytä seosta 2 tuntia kuten edellä.
Vaihe 3: Lisää seoksen joukkoon siirappi, pomeranssinkuori ja suola. Sekoita tasaiseksi. Keitä seosta liedellä kokoajan sekoittaen 10 minuutin ajan. Varo, ettei seos pääse palamaan pohjaan.
Jaa seos foliovuokiin tai mämmituokkosiin. Täytä astiat vain puoliväliin asti, jotta reunoille jää kuohumisvaraa. Jäähdytä.
Sekoita sokeri veden joukkoon ja lisää 1-2 rkl sokerivettä vuokien pinnalle. Paista 170-asteisessa uunissa noin 2 1/2 tuntia. Voit jättää mämmit vielä kypsennyksen jälkeen jäähtyvään uuniin.

The only thing that I ever had that was Finnish from Finland when I use to live in Queensland, Australia so many, many donkeys, years ago was this bread like food product which is called Finnish Pulla which is a traditional Finnish Cardamon Bread of course.
What is the difference between Pulla and Nisu?
“It's English. This bread is pulla.” Some American Finns still call it nisu, which stems back to the old Finnish word for wheat. Wheat was such a precious commodity in the Scandinavian countries that it was only used to make fancy breads and cakes for the holidays.

I really wonder at how they source this food. I've noticed that people belonging to whatever cuisine is being featured always turn up and say it's being made or served wrong. I live in Canada, and I know I was very suspicious about the poutine they served for the Canadian food episode because real cheese curds are hard to come by. Once curds have been refrigerated, their flavour and texture changes permanently. This means real, unrefrigerated curds are generally only available within a few hours' drive of a cheese factory.
