The reason the person likes to swim is because it is relaxing. This has nothing to do with "as" signifying things which occur at the same time. The example you posted on screen " As I was walking to the store, I saw my friend" is a completely different use of "as" from its use in your first example - ie the reason for swimming. For a similar distinction, consider the use of "while", which can have a "same time" meaning, but can also mean "Although". Eg: While I was sitting on the bus, I had time to contemplate the vagaries of natural language. OR While Canberra is indeed the capital of Australia, it is by no means the largest city in the country.
