I believe it's much less spicy than say 20 years ago since people travel a lot more than before. I tasted them and they are OK. More 5han twenty years ago I traveled to Changsha once. I was so hungry since anything I put in my month I threw them out right away. It burnt my whole month so bad.

Spicy food is considered second rate Chinese cuisine if you compare it southern Chinese cuisine especially in Guangdong. The chili and peppercorns are used as an aphrodisiac since ancient times to eliminate water and bloating in the body areas of China that are extremely humid and has now become a style of Chinese cuisine in those regions.

In China the rice is there to soak up the oil and broth and spice from the main dishes. Hot Pot is my favorite. You’re usually able to make/create your own side sauce, and if you add sesame paste to your sauce it’s a great coolant. Also (most) Chinese restaurants aren’t too adept and making dishes to order. But most times you can say not spicy

The second noodle soup you had, the chewy nooodle is made of sweet potato starch,so it's chewy...The biggest difference between two of them is.. wheat noodle soaked in soup its texture becomes soft and loose, even melts in the soup.. but the texture of sweet potato noodle in soup will be soft, but still chewy, and take more soup inside of noodles, makes it more suitable for soup...that's why a dry noodle and a noodle soup have same toppings but noodle is different

You can also try the stir fried lungs “fu qi fei pian”, and spicy tofu “mapo tofu”. Hotpots are better enjoyed with other people it’s more of a social event than just food, family or friends hang out and catch up over a pot of boiling broth haha, similar to making dumplings is a family gathering thing too.

You should tell the waiter not to be too spicy, Chongqing ordinary hot pot is too spicy for most Chinese

    😂😂😂看他一头汗,有够搞笑的。不过,不得不赞叹,这探索精神真不错。(居然到处钻,还真让他找到老火锅店来作为第一次火锅体验,幸运)
