  • This has totally changed my view of mussels from something I can tolerate to a dish I really enjoy. I highly recommend it.

    Recipe: Serves 4

    2.5 kg mussels
    1kg potatoes
    oil for frying
    100g or so shallots (5 or so shallots), finely sliced
    300ml (1 1/4 cup) dry white wine
    4 cloves garlic, chopped
    1 rib celery, finely sliced
    10 stalks parsley, chopped
    40g butter
    Salt to taste
    Cut your potatoes and then fry twice resting between. Cook 5 minutes then change, then let them cook until on the second cooking.
    In a large pot or similar (French use a pot called a "casserole" but this is not an American casserole dish), melt the butter and cook the shallots for a few minutes.
    Add garlic, celery, and parsley. Stir well.
    Add mussels, and then drizzle with wine. Cover and cook under high heat for 6 minutes, stirring occasionally.
    Serve mussels in a bowl with fries to the side. Let guests salt their own fries. One can serve with mayonnaise for the fries and garnish with parsley and/or celery leaves.
