“Can’t-Stop” Candied Peanuts!

  • WARNING: Do not make too much cuz you will eat them all way too fast!! These were my ultimate childhood treat. They are the perfect movie snacks, and pack up well as an edible gift for the holidays, or a hostess' gift. They are also vegan (if you use cocoa instead of Ovaltine) and gluten-free! ถั่วกรอบแก้ว
    The peanuts are coated in crunchy candy coating flavoured with cocoa, and sometimes a little coffee. They're rolled in toasted sesame seeds which give you that munchiness of sesame snaps. Few snacks are more addictive than these and it only takes about 20 mins on the stove; no oven needed!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the CZcams channel Pailin's Kitchen.

    IMPORTANT NOTE: Hi everyone! So glad to see so many of you have tried this recipe successfully! Although a couple of people have reported that their peanuts were still soft inside. If this happens it's likely because your heat was too high, and the sugar crystallized faster than the nuts could roast. I explain more about this in the written recipe on my website linked in the description above.

    OMG! I cant tell you how happy I am to see this recipe! I was a Peace Corps Volunteer in Mahasarakham over 30 years ago. I made it my mission to secure several bags of these every time I went on a 'tio'. I made your recipe and it transported me instantly. I've tried to make various versions of these over the years and always disappointed. The coconut milk was the key. Sublime! And even better with almonds (though I did very lightly toast them first).     Hey! I think I found a solution for the "undercooked" peanut problem! I did this myself - I cooked them as directed, but probably rushed it a little. They came out good, but were soft and tasted a little off. I looked up a recipe for roasting peanuts in the oven, and used that, and cut down the time. What worked for me: I just left them on the baking sheet with the silpat, and then put them in the oven and turned it on to 350F. I set a timer for 10min after the pre-heated chime sounded. So, maybe like 15min total? I pulled them out and let them cool, and they're perfectly crunchy and have that roasted peanut taste.

      Were you happy with the end result on your batch? I know there are various elements that may affect the end result. I had more clumps or sugar outside than on the peanuts. 1/3 of the peanuts had lost their skin during the process. The sesame did not stick on as well. The peanuts although not raw tasting, were not crisp, although the coating was.

      I watched one CZcamsr's recipe for tanghulu (basically crispy-sugar-coated strawberries) and I remember thinking they seemed to "shatter" like glass. I thought the description fit here too.
      I wish I could make these! But I'd probably destroy one of my cheap pots/pans in the process. XD

    I tried your recipe yesterday. Although I just used 130gr sugar instead of 160 like yours but it was still a little sweet. The next time I will add more chocolate powder and coffee powder to reduce the sweetness also make it more flavor. Thanks you a lot for an amazing recipe!

    We have a similar sweet here in Argentina called Garrapiñada which is basically peanuts coated in caramel with vanilla essence sometimes, the are sold everywhere, you can find street vendors on every corner and every park in my city and I agree with you, they are so addictive

    Coffee also helps boost chocolate flavor, so is often added (either as instant coffee or instant espresso) to chocolate desserts.

      Thanks for responding Adam. I did find it on Amazon through a sub-seller for $529.51 plus s/h, and also through Alibaba. Too pricy for me. The Thai Consumer Protection Bureau in May of this year launched a full scale investigation into the manufacture and safety of this company's "marble" brand products as there have been complaints that it does not contain marble and is instead thought to be aluminum coated. It may not be a big problem but no reports of findings have been published to date, as far as I can tell. Just something to consider if using acidic ingredients like vinegars or citrus.

    Made this today and unfortunately, mine came out soft, too. A few tips:
    1. I kept the heat very low, so I don't think the problem is the flame. It's the peanuts themselves, which are huge, about 2cm long. They didn't have enough time to roast before the syrup dried up. So go for the size in the video.
    2. A non-stick wok will work better than a conventional one. Not that the sugar will burn, but I still lost quite a bit to my pan.
    3. I did 300g of peanuts but I didn't scale up the sugar, and I find it sweet enough.

    Thank you for sharing this I remember eating these in Bangkok. I made this in a small coated sauce pan with homemade coconut milk and it was amazing but I don’t really have coated pans( aka non stick pans) I only used stainless steel & cast iron pots and pans. Would it be possible to make this in the stainless steel pan ? I wanna make a lot to give ppl as Christmas gifts

    Ovaltine! Yeah, I used to drink that as a kid. It was really more something from my parents generation. My dad claims he had the decoder ring. I never knew they marketed it in Asia.

      i love how thailand (and malaysia, singapore and some other places im sure) use milo and ovaltine sometimes, growing up in australia i love them so much and its so cool to see other countries enjoying them too and seeing how they use them. in australia no one really does anything more than follow the package directions so its cool to see people use them in cool ways for a change aha.

    Forgive me if I've duplicated questions, but:
    (1)Can you sub witth coconut sugar?
    (B) Also, (for the adventurous): How about either red pepper instead of coffee, or pepper flakes instead of sesame seeds? Will the capsacin muddle up the sugar chemistry?
    (notice how I used "muddle" instead of *expletive delete*?)

      When I was living in Thailand, I used to make these with skinless peanuts all of the time. The sugar sticks to most all of them and it really wasn't a problem. I never could find raw peanuts with the skins on them, so I used what I could get. If you can skinless raw peanuts locally without having to drive to the next town, I'd just buy those and give it a try.

      @@gozu9455 hmmm, already roasted might not work since cooking them in sugar kind or roasts them, they might burn. But at least with the salt, you wouldn't have to salt them. Try a one cup batch and see. A simple recipe is 2 cups peanuts and one cup sugar, so you could just scale it down as an experiment. Then if it works, try her recipe. I think they would over cook though... now I'm curious, lol.

    I taste is very good, I made two batches however is can get the sesame to clign to the peanuts. I waited to see wet spot but after 32 minutes I pulled it off the flame so it didn't burn. I am my waiting long enough.
