- During my weekly re-watching of Community, I was reminded that an entire episode was dedicated to the study group's Goodfellian pursuit of chicken fingers. Needing a break after last week's culinary marathon, I jumped at the opportunity to brine some tendies in pickle juice just to see what happens. Turns out, it tastes real good! Thanks Greendale!

As someone who works at chick fila I can confirm it is indeed a legend. We don’t use pickle juice
This is the comment I was looking for. I detest pickles, and I can always tell when chick fil a copycats use the juice. Since I adore chick fil a instead of throwing it up, I am certain no pickles juice is involved.
It's a weird myth because the only pickles that are involved with anything is on the sandwich....we used to get in trouble for frying pickles for ourselves because it could contaminate the oil...so I assure everyone no pickles

Pickle juice was added to a brine mix for the grilled chicken recipe. No pickle juice is used for the fried.

Nice! I was just recently binge-watching Community. I'm currently on Season 5 and it's one of the best shows I have watched. Episodes like this one and paintball and animated ones make it so special.

Tip: Beat the tenders up a little bit with a mallet to tenderize and separate some of the chicken. That will result in more crispy, craggely edges because more flour is sticking to the surface.
Corn flake crumbs make for an amazing texture for breading. My mom exclusively uses corn flakes for croquettes and milanesa, which is basically a Latin American version of schnitzel. I don't know common it is outside of Southern California, but you can get pre-ground cornflakes, which is convenient if you're using it for breading, because an entire box of whole corn flakes results in a fraction of what you would expect when they're ground.
When Babish opens a restaurant I expect to see “you can trust your crust will be robust” in a menu description.

Had a friend that worked for Chick-fil-A for years and asked him about the inclusion of a pickle juice in their recipe. He told me at no point in the breading process do they add pickle juice. The real pickle flavor comes from when they put pickles on and seal the sandwiches in the bag which steams them

Worked at a cajun/creole place where we did fried chicken in beef tallow fryers. Best chicken I've ever tasted, and the fries that came out of that fryer were next level too. Mixing blackening spice into the dredge was great for extra flavour too.

the timing on this.... i just finished watching community for the first time TODAY
The best breading is 80% cake flour and 20% wheat dextrin (AKA Benefiber), with a dab of baking soda to help the mix brown up when frying. Instead of eggs, you use a batter made of water and dredging mix. Chicken goes in the dredge, then in the batter, then in the dredge, then in the batter, and finally left to sit in the dredge. Be generous with the batter and let it get drippy in the dredge; the end result will be that much more craggly, and you won't have to fret about wetting the dredge if you're sloppy with intent.
All-purpose flour is okay, but cake flour has less gluten, which means less matter to absorb water and become stale or soggy. You need a little gluten for structure, but protein is otherwise your enemy if your goal is maximum crunch.
Not only will this produce the crunchiest fried chicken you have ever had, it will stay crunchy even as the chicken cools. Dextrin is magical stuff.

Chicken fingers are my go-to for trying out a new restaurant. Basically to see how they prepare food and how they make their food stand out enough that you want to come back for another meal
Cut into thinner strips they are great for fried chicken wraps such; buffalo and blue, Cesar or garden (green pepper, radish, spinach and green goddess) are my favorites.

I pretty much gave up on deep frying because of the amount of oil involved, but a shallow pan like that might still be feasible. Thanks!
I’ve made the final recipe twice so far
First time I did the minimum, brining for only 8 hours, single dipping, all the simple.
Second time I brined it for the full 48 and double dipped, best chicken I’ve had and made.
I know this will more than likely go overlooked but incase it isn’t and you plan on making it, the extra 40 hour wait is more than worth it.
