    I got artichokes at Haymarket Square in the North End in Boston, 5/$1.00 at the beginning of summer and they were huge. They had organic blueberries for $1.00 and they weren't the small containers. If you go on Saturday around 5pm, they're practically giving everything away.

    I keep all the leaves and I eat the stem. My pressure cooker looks just like this one. I place a folding steamer rack inside the cooker so my artichokes steam instead of boiling.

    Unlike pressure canners, pressure cookers can be rapidly cooled down by running cool water over the lid... Doing that will save you the 20 minutes you used waiting for it to cool down!

      Thanks, Barclay! I was wondering if that was possible; hubby bought me a small pressure cooker for Christmas and I've yet to use it. I really don't have the knowledge of it yet. Thought I'd spend this spring figuring it all out. Knowing you can run cool water over it without it exploding is good to know! LOL Looks awesome, as usual, Linda!!

    I've never heard of cutting off the delicious stem. It's the best part to eat, next to the heart. But now that I see you can fit 3 of them in there vertically if you cut off the delicious stem, I might start doing that.

    I stuff my artichokes with Italian breadcrumbs, romano cheese and olive oil. Then I top it with what Italians from Boston call gravy aka spaghetti sauce.

    I usually stuff them with Italian breadcrumb and parm cheese then drop a pat of butter on top of each before sealing my pressure cooker. Yumm!

    I'm not really a fan of artichokes but I use a pressure cooker (one that I inherited from my mother, and old Mirro) for cooking lots of things. I can cook brown rice in 15 minutes, dried pinto beans only take 20 minutes. Using a stainless bowl with the food and the right amount of liquid inserted in the pressure cooker with the water needed for pressure keeps the food away from sticking to the pot. When done cooking, just pull the bowl of food from the cooker and serve. Makes cleanup easy.

    Can we help this good cooking lady with a highpressure pan from Europe ...oure pans do NOT need to cool down ... you can open it after decompressing ... takes 2 minutes ... and you can cook with differant pressure ...

    I have a 2020 model Presto pressure cooker, the stainless steel kind, with a 6-quart capacity. For some odd reason, this cooker only takes ten minutes to cook an artichoke or some artichokes.

    Thanks for the video....I tried to make them once and they were awful !! So I don't know if it's how I made them or that I just don't like them. I'll have to give it a try again. I don't have a pressure cooker, wouldn't know how to time things in it. I'l looking forward to your videos on how to eat these artichokes. :-)

    Lmao if you think that pressure cooker is old you should've seen my grandma's, it was at least 50 years old, and it had this side walls that were like a half an inch thick
