Fresh Artichokes - How to Eat Artichoke

  • All you need to know to choose and buy fresh artichokes. Artichoke is a great ingredient, but I prefer canned or jarred artichoke hearts, especially to use in artichoke pastas and in salads. I’m not a big fan of fresh artichokes, although CG loves fresh artichoke. She likes to steam artichoke in the microwave and serve it with a dipping sauce. You can view more artichoke info and the complete sauce recipes at
    www.myfoodchann...
This is one of the best prices I found on Amazon for Canned Artichokes amzn.to/39k8CcW but mostly the artichoke prices are pretty over the top online...so definitely check your local grocery store first for canned or jarred artichoke.

    Ways to Prepare Fresh Artichokes
As with many foods, you can prepare artichokes in a variety of ways. What’s the quickest, and one of the most nutritious ways to prepare fresh artichokes? Well, let’s compare some cooking times.
Stuff and Bake. You can add some great flavors but expect an hour of cooking time.
Grill. Great grill taste but you need 45 minutes of cooking time.
Boil or Steam on the Stove. After the water comes to a boil, it takes another 20-35 minutes, depending on artichoke’s size
Use a Pressure Cooker. Cooks faster, but you need a pressure cooker. And, it’s harder to tell when the artichokes are done.
Microwave Steaming. Generally will take about 6-10 minutes to microwave steam an entire artichoke, depending on your microwave’s power settings, and the size of the artichoke. DING, DING, DING - WE HAVE A WINNER!
Tips For The Best Steamed Artichokes In The Microwave.
So, you’ve decided to steam an artichoke in the microwave. Here’s how to make the most of it.
    Prep The Artichoke.
Before microwaving, cut the top third of each artichoke off. This is going to be the toughest, inedible artichoke leaves so don’t be sad. You can always make your compost pile a little happier with inedible artichoke parts. A sharp, serrated knife helps cut through the top. Even better, use an electric knife, if you got it.
To keep it from browning before you eat it, once you cut it, sprinkle with some lemon or lime. Some types of fresh artichokes brown more easily than other. One good thing - if it does brown, it doesn’t impact the taste.
    Find The Right Dish.
You want a dish where you can place the artichoke(s) cut side down, with about ¼ - ½ cup of water in the bottom, and that can be tightly covered. The cover can be the microwavable lid, a dinner plate, or plastic wrap.
Add Some Seasoning Before You Cook.
Add a bay leaf and/or some lemon to the water. Sprinkle some herbs over the artichokes before you cook it.
To increase the cooking time even more, cut your artichoke into 4-6 parts. This way, you have more surface area to season, and you will reduce your cooking time even more.
    Avoid Overcooking Your Artichoke.
Although the microwave makes cooking the artichokes fast and easy, you don’t want to overcook your artichoke. And different sized artichokes will cook differently. Check a whole artichoke after 7 minutes to get an idea how fast your microwave is cooking. If you cut your artichoke in halves or quarters, check it after 4 minutes. You know the artichoke is done when you can pull an outer leaf off with ease.
    Serve Warm.
Let the artichoke cool slightly, but serve warm.

Thanks for your recipe, I love artichokes. If you don't mind adding some carbs try this method. Pound the artichoke flower side down onto the counter to open up the leaves. Mix in a bowl, 1 cup of Italian bread crumbs, 1 tablespoon of parmesan cheese, and a pinch of salt and pepper. Cut off the stem so the artichokes sit flat on the bottom. Take your mixture of bread crumbs and fill all the artichoke leaves about halfway. Drizzle with olive oil. Take a pot, pour in a bag of lima beans or butter beans in the bottom. Pour in enough water to cover the beans, and carefully set your artichoke flower side up on top of the beans nestling them in place, but not so deep water spills into the leaves. Cover and set temp to medium heat, do not boil. Takes about 45 min, it will be done when the leaves easily pull free. To eat grab the leaf by the tip and scrape the lower half of the leaf with your teeth to remove the breading and soft flesh part, discard the hard part of the leaf. When you reach the heart of the artichoke, scrape off the thistle with a fork, the heart of the artichoke is the real treat. Enjoy!

As the son of an Italian mother my siblings and I had lovely artichokes as we grew up. They are a bit odd but when something is introduced in the early years it seems quite natural. My mother would steam them with garlic and olive oil. They can be a bit tricky to eat but they are very delicious. We always had small bowls of mayonnaise or spiced oil and vinegar to dip the more tough leaves before scraping them against our teeth. It was delicious. Then when the softer leaves were coming up one could eat whatever they found digestible. Finally, one would be able to dig out the heart and it was like a jewel and tasted wonderful. There are many different recipes for artichokes - also according to age and size. Jewish cookery has a recipe for deep fried artichokes which I have never tried but they look amazing - you can then eat many more of the tougher leaves as they soften and become crunchy due to the cooking style.

My family are Sicilian, and artichokes are a traditional favourite. My mum goes mad for them. As for myself I am lazy and don't like eating them that way! However, my grocery store sells grilled artichokes in a jar, they are tender and you can eat the pieces whole. I enjoy them in a salad or as a tasty snack on those miniature toast bread crackers. ✨🐬✨

I enjoyed this video. I steam veggies a lot in my microwave and I think this is the first video I have seen you two cook with one. I also was introduced to another food that squeaks. I wonder if you could do something else with the artichokes to use more of it. I have made candy from orange peels. I bet there are some old recipes of people pressure cooking the leaves to break down the fiber and then doing something with the results like deep frying or pickling.,etc.

yes, I think artichoke could only benefit from an unhealthy dose of cooking. "You will realize that your life was good till you got yourself an antichoke" haha, what a great way to sum it all up, Chef!! Awesome recipe by both of you! However, I must agree with Chef Buck that it's not that enjoyable when we have to throw away 75% of the vegetable. The vitamins and stuff mentioned by Camera Girl is definitely good but this might be an expensive and annoying way of acquiring it. However, this recipe and presentation is valuable as we are often required to prepare such dishes whenever we do feel like eating one or perhaps for guests. So, thank you for sharing this with us, Chef and CG!!

you have never tasted artichokes till you tasted the Roman ones, Rome, Italy has the best and most tender ones that you can't find anywhere else, the Roman artichoke is famous and very meaty. the leaves are tender and eatable, you never pick artichokes when they have bloomed that is why they have hard leaves, the Roman has no beard and no hard pointy red leaves. Unfortunately you can only find them in Rome and that is where I live, I am lucky.

Too funny! I love artichokes. I just boil them for about 10 minutes and dip the tips of the leaves in Best Foods mayo. Microwave would be more nutritious so I'll try that next time.

The artichoke is pretty easy and delicious to eat except your artichoke was not cleaned correctly and not cooked long enough.

Artichokes are a lot of work. I dont buy them, but, if somebody else is serving them, them I will eat them. Ice never seen them canned. 🤔

This was especially funny. I equate this with eating crawfish one at a time. Too much work. Just give me an entree of crawfish meat and then I can wolf it down. Buy a can of artichokes or a jar and save some time and frustration.
