turning around without jibing is really easy: just do another catapult in the other direction. That's basically how I turn around. I let my falls decide the direction.
I learned the waterstart on the ground first, and when i was able to do it on the ground, i tried in the water and it worked ! If you achieve beachstart, you will need a little flexibility in the legs, and you will success.
Good luck, I’m restarting my windsurfing journey at 56, also never learned to water start, need some luck as well. Fortunately there’s mounds of equipment (mostly old) now going for a song.
