I grew up in Pittsburgh and I made ham barbecue sandwiches just like you're doing now. Isley's chipped ham is special. It's different than just chipped ham. I've been all over the West searching for chipped ham like Isaly's. Nothing is like it.

Ham bbq's for me are always just straight Isaly's chipped ham, Heinz Ketchup and Heinz Sweet Relish. You can add other sauces and make tweaks from there but that's the base.

I’m from Pa But have been in Virginia for 20 years. and was craving ham bbq. my kids don’t like it. My co workers never heard of it. So I threatened my work crew of 13 people I was bringing some to work, and today was the day. Pretty sure all 13 will be making this for their family. 🎉 you can take the girl out of Pennsylvania, but you can’t take Pennsylvania out of the girl!! ❤️ Once a yinz-er always a yinz-er

If you really want to make this a somewhat true BBQ, in lieu of white sugar, use brown sugar. Brown sugar is used in authentic BBQ sauce recipes.

No, its not. Isaly's is half meat and half fat. That's what gives it its flavor and texture and why it is so deliciously sloppy at the end of cooking and why it absorbs into the bread so perfectly.

I knew it was a loaf, but I didn't realize that trimmings (fat) made up 1/2 of it. I guess that's why it was/is so inexpensive.
