Beef Luwombo(meat in banana leaves)

- Ingredients
2 grated tomatoes
1 chopped tomato
1 chopped onion
½ green pepper
2 medium carrots
1tbs coriander leaves
4 cloves of chopped garlic
1tbs soy sauce
1 beef cube
4 banana leaves (1 for down 3 for covering)
1 pair of smoked banana leaves
A banana fiber or string for tying
Directions
Get your basket and place the smoked banana leaves starting with the bigger one down then the other across. Start by putting in the meat but make sure you don’t have meat with bones that can pierce your banana leaves.
Add all remaining ingredients above to the meat and begin to bring the banana leaves to the center carefully so that you are able to tie your meat. Make sure it’s tight. Cut off the excess banana leaves and set aside.
Place your banana stalks in the sauce pan and eyeball your water but should cover the stalks (if you don’t have banana stalks you can used nice chopped wood)
Get your 4 banana leaves , start by placing one on top of your stalks in the pan, put in your luwombo(meat) into the saucepan then start covering with your 3 banana leaves one at a time then cover the top of the banana leaves with another sauce pan and cook for 3 hours on a charcoal stove or (gas or place in the oven). When ready remove meat from pan and place in a serving bowl untie , open and serve. - Zábava
