Did you know about Johns Hopkins University's masters in AI? It has way better classes than the ones you list and the only with a bunch of symbolic AI and other stuff like fuzzy, evolutionary, game, swarm, ... methods from what I saw. Also, it can be entirely online and you can take as few class each semester as you want. A lot of people work at the same time.
