Ahhh you’ve got to make the Christmas crack the right way without the store bought caramel. The homemade brown sugar and butter has to happen and gets super amazing texture after being super cold. You must eat the crack cold and fully solidified. Overnight in the fridge to fully harden. And thicker chocolate on top.

Yes, it’s a homemade toffee not caramel . The toffee gives it that crispy crackle texture . Also you don’t have to pre melt your chocolate chips , just sprinkle over the toffee and it will melt so you can spread it .

yes was coming here to say the same thing. Our family has been making this for over 20 years. You have to follow the instructions to get the toffee part right.

For the Christmas crack, you have to make your own "caramel" because it isn't actuslly caramel. You need to cook the sugar until it is at the hard crack stage (think lollipop). You can test this by dropping little drips into cold water, and once cool seeing of the the little drip is hard like a lollipop. Then when you pour it over the crackers it soaks in and the crackers become like a brittle. It only goes in the oven to make it hot enough for chocolate chips to melt. If you use already melted chocolate chips to spread, then you dont need to put it in the oven. When it colls and it breaks apart, it should all snap like a brittle or a bark..even the crackers with the melted sugar. There should be no sticky consistency. Trust me..try again..its worth it! ❤ Also topping it with a sprinkle of kosher salt on top of the chocolate makes it even better.

I know when I did my candied walnuts, I didn't use egg yolk, just egg whites. Then I just kept mixing them in a special pan that had a handle that turns to keep the nuts moving so they don't burn. Glad you had fun making all these delicious treats.
The Christmas Crack has a different texture if you cook the butter & sugar mixture on the stovetop instead of using a syrup. You end up essentially with a toffee layer.

Parchment paper is for heat. So you can cook with it. Use wax paper for cooling or letting chocolate or other sticky stuff set.sticky stuff comes off better on wax paper.

For the christmas crack, they cook the sugar to a temperature that allows it to harden. The cracker will absorb some of the melted sugar and when it hardens, it'll be more of a toffee. My mom use to put crumbled heath on the top. It really deserves the title christmas crack because its so addicting ❤😋
